The Create mod has a "Funnel" block that extracts one item/stack from a container every time any redstone unpowers it. The faster your clock, the faster it can extract items. I'm not sure what the speed limit on it is, but that's one use case for faster clocks.

I was messing around with Redstone the other day. And I made this clock that moves the pistons so fast that it messes up the animation and looks like the pistons are lifting off the ground lmao.
