We have three Kaffir lime trees. Two of them are typical: maybe 12 feet tall. One is a giant: easily 20 feet tall and at least as round. It's a huge beast of a tree. The big tree produces so many leaves that we used to trade them for dinner at a local Thai restaurant. We'd deliver a bucket of branches and get dinner for "free." Kaffir lime leaves sell for dollars per ounce: very valuable.

I've learned my Thai cuisine fundamentals from Asia Scenic school in Chiang Mai. Very nice experience. It's just difficult to source the ingredients in my country lol. Can't wait to go back ^^

I tried making Limeade with Kaffir Limes from one of our three trees: It was dreadful. There was no way to counter the bitter flavor of the juice, but as our host says, it smelled delicious.

You can use white sugar, it’s same taste. But mostly I use brown sugar.
