Ok , I made some in australia and just hung it on the washing line and day 4 was my preference but my steaks were thinner. Thanks for your help

You could use any cut of beef with decent amount of fat. Brisket is my favourite.

@XmanCo thanks chuck roast is cheapet here in shops in australia. I might try both, I also making dry wors ,got some freddy hirch spice,for my bori i got some Grabow spice.

Hello, thank you for sharing the recipe! Can't wait to try cooking it for ourselves. Looks like a great one to do for lots of people with (relatively) less effort. Was thinking those lines and the pot size are great too, but not sure how accurate it is for my family haha! (Eat like horses)

Hey mate, great video! Just a small clarification: 'Eisbein' refers to the boiled version of pork knuckle, while the roasted or BBQ version is typically called 'Haxe' (though names vary by region). Eisbein is often served with sauerkraut and mashed potatoes, but because of its unique texture, it's more of an acquired taste.

Those machines are NOT stuffers. It breaks down the meat. Use a mincer as a mincer, and buy a stuffer to stuff the wors. You will see the texture is much better. We have 4 machines here and they claim they are stuffers, like yours, even comes with attachments, but they don't work for stuffing, unless you want to destroy your texture. The meat that went into the stuffer is not the same as the ones in the wors, It will probably work for russians using that machine as a stuffer, but not for Boerewors
