What’s good for pies? I got over 1000 pies I have to egg wash and don’t want to use the old fashioned brush method I just want to pan up and spray but the eggwash in the bottle was too thick and it didn’t mist maybe add a little milk or water or can I just use milk?

How am I supposed to do that with a searing hot pan?
@ChefKatieRosenhouse9 ай бұрын
Don't touch the pan... just the macaron! Use a small offset spatula or knife to lift it off if you're nervous!

Damn If only I saw this like 5mins ago, I just made macaroons with my sister and when we were getting them off of the baking tray it was sticking, ill keep this in mind for next time 😊

Real vanilla, real vanilla extract, and that speckled vanilla extract all beed to be used with ice creams, buttercreams, ganaches, and anything that doesn't get boiled or baked. Artificial vanilla, etc.fir bakings purposes.

Does the chocolate solidify when you cook it for too long?
@ChefKatieRosenhouse10 ай бұрын
With any chocolate - especially when using direct heat - if it gets too hot it will burn and seize (solidify). The oil will help keep it flowing, but make sure to cook over low!

What about the side?
@ChefKatieRosenhouse11 ай бұрын
You shouldn’t need to line the sides of the pan - if you’re nervous about things sticking, I would spray with cooking spray before pouring in the batter!

My meringue keeps coming out crispy on the outside but gooey on the inside, then it gets sticky and deflates after and hour, any tips? (My recipe is 2 egg whites 1 cup of icing sugar and 1tbsp of lemon juice, also my eggs are from my chickens.
@ChefKatieRosenhouse11 ай бұрын
Fresh eggs, how lovely! If your meringue is crisp on the outside but gooey on the center (and it's deflated afterward), you might be underbaking it. What temperature are you baking at? Long and low is best for meringue - it should be marshmallowy and soft in the center, but not gooey!
@ChefKatieRosenhouse11 ай бұрын
That's also about double the amount of sugar I would use for 2 egg whites - sugar will weigh down your meringue, so lightening up a bit might help.
