Really appreciate the recipe. I made pineapple zucchini jam and it was not thick enough. It also didn't last long after opening. I am going to redo the whole batch and try pectin. Thanks 😂

Thanks for the tips! I don't know why but people drop the garlic cloves in whole. I did an experiment decades ago where I canned a jar of dill pickles with whole cloves and a jar with crushed garlic cloves. The same brine/vinegar solution and spices were used in both. Six months later I opened them and taste tested them. There was just a hint of garlic in the uncrushed clove jar where the crushed garlic dill pickles had a nice rich garlic flavoring to them. I've crushed my garlic ever since in every canning recipe using garlic. The difference is amazing! CRUSH YOUR GARLIC CLOVES for max garlic flavoring!

I had one of these when I was in my early 20s, which I found at a thrift store I worked at. I never used it and eventually gave it away. Yesterday I found 2 at a small thrift store in Yoder Kansas and quickly snapped one up. I'm so excited to use this recipe.

I lucked out, got one a few years back in a thrift store. Was still in the original vintage box. only time I've ever seen one. They are beautiful, and very delicate due to the cylinder tube design, must be treated with caution so as not to break if you ever come across one and buy it. Helps to keep in it's own personal safe space away from other things in kitchen.

I would have just dropped the beans into the bourbon jar! It was so pretty and you had a bit of room in there since you used some of the liquor. BTW it is called Bourbon vanilla not because of the use of bourbon whiskey, but because the Reunion island near Madagascar where the beans came from was called Bourbon Island at one time. Bourbon vanilla is another name for Madagascar vanilla.

Wash those veggies supper well ! Lately I have been getting veggies from the store like celery and it is so filthy its unreal. But QUESTION - For Mirepoix doesn't one want the three items to be of the same size? With the carrots being so tiny won't they cook up super well in the process? I am NEW to this so my questions might seem obvious but I will learn and then I can share with others.

Wouldn’t the carrots be more dense than the onions and celery. So, the carrots would require more processing time than the onions and celery. Therefore, they need to be smaller in size to process in the same amount of time.
