I have a Morning Coffee machine and have been experimenting with recipes. I am trying to replicate a two-shot 12oz flat white. So, how would I vary the output of your recipes in The Morning app? I assume that I wouldn't just run them through twice. Your recipes in the app are between 25g have 32g output. Would reducing the output to, say, 20g for each of the two capsules be feasible? I am also assuming the pressure of a capsule machine is higher than that of an espresso machine, given that you are only using 5 grams of coffee to get somewhere near an espresso result, which uses 9g for a single shot. Or should I just over the idea of replicating a large flat white espresso and use the pod within its capabilities

All true... if you're starting off with good well-roasted beans. A dark roasted lower quality coffee, especially low-grown commercial robusta roasted dark is always going to be bitter (and to be honest it'll be horrible roasted light too). You can only extract the flavour that's in the beans to begin with...

Hello @unishagrgmessi, it's likely that your burrs are close to replacement time. When the burr edges become dull and without that razor sharpness, they don’t grind with as much precision, and the result is that beans are ground more coarsely. You may also try to adjust the grind size; rotating the collar clockwise will make the grind finer, and rotating the collar counter clockwise will make the grind coarser. Hope this helps. 🙏

Hi i just viewed your videos. i have mythos 1 also at my cafe, how often you change the burr and the capacitor? is it okay to change per 6 month?

Hi @rizkirdn! Our recommendation is if you use less than 13-15 kgs of espresso per week, change your burrs when you do your annual espresso machine maintenance. If you are using more than 15 kgs of espresso per week, change them twice a year. Same with replacing the capacitor every 6 months. :) Do not forget to subscribe to hear more of our coffee and machine tips. :)

Hi, we are using Porter St with the exact same coffee machine you're using in your video (Breville Dynamic Duo), but are struggling to get the same result. Can you please help? Temperature: 94 degrees. Weight of ground coffee: 21g in 58mm portafilter. Grind size: we tried 14 and 11 (same outcome for both). As we are pressing the button to start extracting, I'm measuring the yield, and I'm reaching 50g already after 17 seconds, instead of 42-44g after 25-27 seconds. The coffee also runs not like yours in the video, the first bit is thick and black, but then it runs light brown and runny soon after. Further, when I grind 21g into the 58mm portafilter, it sits up too high for me to tamp it properly so that the silver line is level... the tamp will sit up by a few mm. Appreciate your help!

Hi @andreakubin7747. Appreciate that detailed info. Looks like you are on the right track when it comes to our brewing guide. But also, please remember that the weather, the season, changes in the blends' origins, and freshness are just a few examples of the many factors that could have an impact on the coffee, even following the brewing guide. Consider these points before changing your grind setting. Maybe the season has changed and the way your beans are now aging doesn't work well with the grind setting you currently have. In order to improve the extraction, try making the grind setting coarser or finer. Also, be sure to keep your beans in an airtight container, out of the sun, and in a cool location (your cupboard is just fine). We also recommend to take advantage of Breville service if you are a subscriber to the white glove service. They will be able to assist you with solving problems and offer the finest advice and instructions for using the equipment. :)

Hello @joylan9281! For flat white, you may pour between 140-180ml of milk to prep for the steaming process. Our Porter St is in its prime around the 9 -13-day mark and best consumed within 7 - 21 days. It carries the classic full-bodied bold, dark chocolate notes. Its ease of use with any milk or alternative will make for a perfect morning brew. :) Also, this blend consists of higher intensity in strength. We recommend using Porter St as a milk based option or a stronger espresso.

Hi @lukestumbo3575! :) It depends on the flavoring you will use, and the taste it provides. Generally, we suggest aiming for a coffee ratio of 1 gram of coffee to 15-18 milliliters of water. You can always be playful about adding flavoring to your coffee, it will be so much fun. Or it could be a great bond with your friends to figure out which one tastes better on their pallet. :)

I tried this recipe today and for me it was quite weak, and that's with me even forgetting to get a cup ready and accidentally overbrewing it by almost double. I just couldn't really taste the coffee over the milk. Perhaps my grind was too course still but I had it set to the coarser-quarter of the range labeled on my grinder as "espresso" so I figured that'd be fine enough. Do you recommend more light or dark roasts for this method?

Hey @DreadKyller! Since lighter roasts tend to play up the acid qualities, cold brewing will mute that profile. We prefer darker roasts as the cold brewing process will bring out the nutty and chocolatey flavors, resulting in a rich and smooth flavor. :)

Hello @ammarkoreshe7501! We recommend you start with a grind level 14 and adjust to your tastes from there. To do so, adjust the grind dial on the side of your machine. Move the dial closer to coarse for a less intense flavor, and rotate it toward fine for a richer flavor. The ideal dose on a 54 mm portafilter is 18g of freshly ground beans.

Hi @davidektrung1935! Generally, coffee grinders should be cleaned every two weeks. However, this can vary depending on the type of beans and how frequently you use your coffee grinder. If you’re grinding every day, or using oily beans, you’ll want to clean your grinder about once a week.
