I wish there was a marketplace like this near me. (Pennsylvania, USA) We have the occasional food trucks at outdoor events, but that's it. These people who run these stands are dedicated and hardworking souls and I marvel at their skill and passion. They also make me hungry each time I watch these street food videos. 😋

There are a lot of fresh ingredients and money spent going into these dishes and should be very yummy, and they wake up very early to do all the labor-intensive preparation, much of it very professionally done, and it is very inexpensive to the consumer. My only reservations are how much palm oil, refined white sugar, and MSG goes in. I have lived in Thailand 20+ years and have owned and operated several restaurants here, and dined at countless food stalls, so just a bit of experienced observation. Remember, it's the Land of Smiles ;-)

Hands have been washed before each cooking and all the ingredients have been washed and prepared for cooking. If they should show you all that processes, the video would probably take 4hrs. Besides the food is not raw and cooking kills any bacteria.
