Amazingly well done video. I am so impressed by the exacting hard work put into making this a successful business. I am from the US and have never seen such dedication and non stop movement from service workers. The food looks absolutely delicious ; and the portions are substantial. The cleanliness is impressive. I would eat here regularly if I could. I am inspired to try making similar dishes at home Thank you and wishes for continued success.

they folks all work so hard and not many are young anymore. its amazing to me. the food of course i am sure is excellent. I love to see Japan one day. going to take a lotto jackpot, lol

Seeing how clean they keep their kitchen was amazing. I’ve watched a few videos about Asian restaurants the last couple of days and the state of some of the kitchens was shocking! Grease everywhere! They were basically a place waiting for a fire to happen.

Looks yummy. The older guy puts more flavor in the fried rice because he adds the spices while frying it, the younger guy just puts the egg and rice. Not too yummy

5 dumplings for $500 yen ($3.46 USD) is little expensive but OK. From 4:00 - 22:00, 18 hours, is a hard work.

the flavoring from the shell itself as well as other trimming they put in adds depth of flavor to the broth and because they are continually adding water they need to add the trimmings throughout the day to keep the flavor consistent. It's a no waste mentality that even the waste can be used for food or food flavoring

Yes, thank you for the subtitles. I'm fairly new to any Japanese style of cooking with authentic ingredients! I often wonder what some of those items are and the translations/subtitles have been wonderful. I love to see the homemade pickled Cucumbers, proper egg fried rice and fried noodles. I would love to see a recipe for Japanese style pickled cucumbers. I've had them several times but have never found the right recipe. They often aren't sweet & sour, just salty and sour which is disappointing. If someone has the recipe, I would so love it!! I can perhaps trade for a German recipe? Thank you! 💖💖💖
