erstens ist es kein Kotelett. Sondern ein (Tomahawk) Steak.Und wenn es -ausgelassene - Butter ist, ich als Koch erkenne das an der Farbe, kann man es auch zum Braten verwenden. Und das Fleisch ist schön medium gebraten. Halb roh ist halt was für den Zoo und die Löwen. Über Rosmarin mag man argumentieren. Für mich ist halt noch zu wenig Knoblauch drauf. Aber auch darüber kann man argumentieren.

Well, the idea is it retains more moisture and more juices, which to many means more tasty. It's ofcourse down to preference but as somebody who once preferred it well done but now likes it medium, give it a try. You might enjoy it

First of all, whatever bacteria, virus and parasites that could be found in beef is generally only found on the very surface of the cut, these pathogens have a VERY difficult time penetrating into the deeper parts of the meat. If they could, then the cut of meat is likley not fresh and have more severe issues than just risk of parasites and bacteria. This is due to beef, are especially dense and thick, different compared to chicken, something that HAS to be cooked well done, no exceptions. Cuts of chicken are much smaller, it is much easier for bacteria’s like E.Coil abd salmonella to penetrate the fibers of the meat. The FDA approved meat temp to fully kill ANY pathogen in beef, pork and lamb is 145 F internal. Medium rare is just shy of this at 135 F but could easily reach said temp by allowing it to render and finishing cooking while rested and Medium is perfect at exactly 145 F. You’re at no risk of eating medium and medium well, and a very VERY small chance of anything happening to you eating med rare. Frankly you more likely to choke to death from eating said steak than from whatever parasites or bacterias you’re worrying about.
