Where you really feel the gravity of how much work goes into operating a simple roti stall is that it’s not only the 6 hours where Puy’s shop is in operation. It’s also the setup and clean up of the stall. The procurement of ingredients. And the preparation of making the roti dough. All of this does not come out of thin air. You really have to put in the effort. Puy’s job literally is an all day operation.
