A fine video but I guarantee that no Italian Grandma has EVER made pizza dough with beer; and using hopped beer as a shortcut for quick pizza dough is a mistake; instead I recommend using MALT VINEGAR (or white vinegar) as a shortcut, about 1-2% using baker's measurements.

My mother (no Italian hetitage) in Minnesota made this every Friday night during the 50s, as a fun participatory cooking lesson with us kids, and our friends who regularly came to sleep over on the weekend helping with the toppings. We ate these Friday night Midwestern "pizzas" with a chopped fresh veggie salad made by us kids out of whatever was in the refrigerator, followed with do-it-yourself ice cream sundaes.

The grease is mixed with water and has a bunch of bits of protein and spices in it, you'd be risking stuff burning and also risking the dough sticking to the pan from it. Olive oil's cleaner both flavour wise and technique wise.

This is a great last minute pizza idea. Soft extensible dough ready when you are. I used a slightly smaller sheet pan ( a 1940s era steel cookie sheet). For me that gave me the perfect dough thickness. Nice recipe. ❤🎉 Brian.

I made this for dinner tonight and it was phenomenal!!! I will never buy pizza sauce again and may never do take out again for Pizza. Thank you for the recipe. Absolutely delicious. I may tweak the crust a little by adding molasses to the beer, yeast, Olive oil to sweeten the crust instead of sugar and add a pinch more salt to the floor.

Decided to give this a try last night. Just as it was going in the oven a neighbour phoned and invited us to an impromptu happy hour. Twenty minutes later we arrived with this pizza which was a big hit. Very different from my normal pizza but tasty and easily cut into small appetizer size pieces for a crowd. I have pcos and this recipe and most of your recipes are simple enough I am able to substitute wheat flour and honey so I am still able to have some of my favorite things. My nieces, nephew, and kids have been begging for a make-your-own pizza night. Usually I make a 24 hour dough recipe (12 portions for all kids and parents). Then painstakingly help everyone roll it out, and then bake it in my ninja pizza oven. Literally 2 hours of constant “work” and it is definitely worth it because it is delicious. However, I can’t do that as often so I’m definitely gonna try this method and allow 4 kids to use one sheet tray. 4 sheet trays should feed everyone in a lot less time. Thanks for the recipe and method!! Can’t wait to try it.

Made this for dinner and it’s so good! The crust is soft and flavourful and the whole thing is delicious - cheesy and rich and awesome. I used the sauce recipe from Brian’s other no mixer required pizza recipe (round pies), a random mix of cheese bits from the fridge, and topped it with pepperoni and mushrooms and and it’s excellent.

I'm not very practiced with making pizza, and I did substitute beef for pork and also a bottle of Italian seasoning blend for all those specific Italian spices, but: This was possibly the best pizza I've ever had in my life. Just made this tonight, came out very nice the dough did have a noticeable beer-y flavor but actually that was appreciated, I didn’t have a stone and for anyone out there who doesn’t have a stone I recommend finishing the pizza on a pan using medium/high heat to get a darker crust on the bottom of each slice you cut, that and also my oven only goes to 525 and wasn’t doing much for browning so about 10 mins into cooking I cranked the broiler for about 2-3 mins, turned the oven off and let it sit in there for another 2-3 minutes. Came out great!

The second one is similar to my go-to Dominos pizza when I'm being lazy: (light) alfredo, with bacon, dice tomatoes and spinach....bonus points if you make it a pan-pizza. It's a surprisingly good combo, though yours looks even better with the drizzle at the end. My lazy "at home" pizzas are general made from store bought naan bread (preferably garlic versions). They're the right size for a small personal pizza....or two if you bring the hunger. Easy to crisp up, and then toss under the broiler with some toppings in a toaster oven. Super fast quick fake pizza.

Adding the olive oil after an initial knead helps the gluten formation. It's especially helpful since this isn't a dough that is easy to add salt after the first knead, and salt also inhibits gluten formation, so adding the olive oil a bit later helps to get that strong dough that still has the right texture in the final production from the oil. I'm no fancy chef, so I have no credentials. I've just used Beard on Bread to make a hell of a lot of doughs and made around two single serve pizza doughs every day for a year, so just my thoughts after that process. I'm a nobody. @@glacialimpala i think not: this kind of sausage is uncured, unseasonead, unaged, raw pork with few other ingredients, it must be cooked (grill, barbecue, oven) and it's less spicy - my best term of comparison for chorizo would be an italian spicy "salame"

Ended up making this! I had some issues with the dough (was my first time ever making a dough!!) being a bit too hard-- i think perhaps because my environment overall was quite cold. What I needed to do was just let the dough rest twice for 15 minutes by the pre-heated oven! Then I was able to spread it nicely :>

I love grandma pizza! But I butter my pan before adding a bit of olive oil. I find it helps with keeping the dough in place before baking and getting it out after baking. I do the same with Detroit Style Pizza and focaccia but there I use more olive oil to get a good fry on the bottom.

one alternative after making a lot of Detroit pizza. use a 60% grapeseed 40% olive oil on the pan to keep the olive oil from scorching and getting bitter.

I grew up in Eastern Europe in the 90s, my grandma would make us a pizza - or what the "Ladies' Weekly" said was a pizza ;) You know this fluffy, high-rise yeast dough that you typically do for cinamon buns etc? That was our pizza; 5cm high, full of yeast and with ketchup as a sauce. omg how is miss it.

Every one likes pizza. My grandmother ate dolmar with sour cream and turkish coffee. Sometimes at small family get togethers they ate caviar on little crackers and small shots of strong booze and turkish coffee. Sometimes they would also eat baush with yougurt or lamb or rice with raisins or olive salad. All my uncles ate pizza only good pizza like the kind you sometimes make.
