Bri you dont need to cook the chicken for 25min in the air fryer if so ofc they are gonna be dry, cook for less time and add oil to all sides, also shake the basket.

Yeah, this seems kind of obvious if you think for even a second. ACtually frying is going to always be better but I do whole thighs in my air fryer for like 16 minutes. They always come out crispy and super moist.

Yo Bri, I used to think air fryers were dumb too -- it's just a convection oven. But I have recently become a convert because, ya know, it's summer time, and I don't wanna turn on my oven. I use it all the time to make my veg, or sometimes for veg and protein combined. I just did salmon and brussels last night. I would say, get the term "air fryer" out of your head and just think of it as a smaller convection oven that cooks faster than a big oven. Great for quick weeknight meals. And, honestly, since you seem to be all about the weeknighting thing lately, I would think you'd be interested in creating recipes geared for it. That's a whole new lane of videos you can start to explore.

Total agreement! The label is not your friend. I didn’t like the air fryer with the basket. A year ago, I decided I HAD to have a rotisserie oven. Then I thought, “How many times are you going to use that, genius?” So, I bought a 7-in-1 type deal. It’s a toaster oven. I LOVE IT! Basket for air frying (easier to clean and fits more), sheet for baking, another for toasting, and the rotisserie (I’ve used it twice). It also toasts and makes pizza. I use it at least twice a day. I love my tiny oven with its wee baskets and such. I have celiacs, so it’s my little allergen-free oasis. I’ve managed cakes and cookies in it too. “Air fryer”=useless. Compact oven=amazing. Same? Yes. But whatever gets the cake baked works for my stupid brain. Get what you’ll use and call it what you can bear. 😂

25 minutes in the air fryer?! That's nuts and no surprise that it was dried out. A whole chicken breast is done in 12-15 minutes, nuggets should be good to go in half that. I think I usually start them at 8 minutes and they're almost always up to 165 when the air fryer beeps to "turn food." I flip them, and hit the bottom or any light areas with another spray of Pam and pop them in for the last couple of minutes.

Brian didn't use enough oil. You should pretty much soak your air fried chicken in oil before cooking. You will get even browning similar to oil frying.

Yeah, don't complain about air fryers when you don't know how to use one. More oil, should have turned the nuggets halfway through, and WAY less time. I do fried chicken in my air fryer all the time and haven't deep fried anything since I got it.

Hey Bri! I modified this chicken recipe for chicken sandwiches and they came out EPIC. I marinated a few halved chicken breasts in the brine for a few hours and cut the breading ingredients in half, made the best fried chicken sandwiches I’ve ever had thanks to you! :)

These look great. Worth noting - my air fryer manual specifically says not to use cooking spray as it can damage the non-stick. They recommend oil in a spray bottle instead.

If you want something that looks kinda like crushed up corn flakes in your breading, I recommend crushed up corn flakes Double dip, once in the flour mixture, once in the corn flakes, for the most robust crust.

I like dipping my nuggets in just straight honey, honestly. I don't do it often, but every so often I'll get the craving. Usually, though, I'll just dip them in Kewpie mayo (which is, imo, the absolute best mayo to use when you're gonna be tasting the mayo prominently).

If you want more even browning and moisture from the air fryer: Try freezing the nugs first. I have an old glass door Emeril Lagasse. It takes a little longer than the Ninja Basket fryers. That said, 34 minutes 390F (for me) from frozen and my breaded bone-in wings are around 190F and perfectly consistent. If you're using breast meat and a basket fryer, I'd recommend about 24-26 minutes at 380F from frozen. Should hit around 170F and make your nugs crispy, firm, and juicy.

I look forward to trying this. However, it doesn't serve the purpose I am trying to fill. My son loves chicken nuggets. When I make him whole chicken nuggets like these, he points out that these are chicken "pieces" or "tenders." He thinks, and I guess I agree, chicken nuggets are composed of meat, and other stuff to get an optimum flavor, juiciness, and texture. I will post this as a challenge. Great video, as always.

It's mostly texture, I believe. The grounded consistency is way different. I'd rather give these to my toddler than dino nuggets. That way they get used to them if they're young enough :)

I've making my own grown up chicken nuggets for my fam for over 15 years. My son when he was 6 (now 22) said I want the chicken with the black spots, referring to the black pepper. We have hence named it Black Spot chicken still to this day.

Alright, so I’ve never made anything of yours that has been bad, but these nuggets are on a different level. I like these almost as much as your dope chili (which has won me at least two competitions, but don’t worry, I cite my sources). I have 3 ADHD kids and it’s rare to find a recipe that everyone will eat, but we are close to 3 pounds worth of these nuggets tonight. I didn’t have time to make the BBQ sauce, but I made the other two and they were great. My kids even said that they like these nuggets more than Jason Farmer’s copycat Chick Fil A nuggets (which we love). That is probably the highest praise you could ever get from my kids. 11/10 highly recommended.

I made this recipe and kinda tried to double the measurements... Anyways I made it and thought I screwed up but the chicken came out so tender and tasty. The only thing I actually messed up with a little too much salt but even then still delicious.

I think you gotta sit down and figure out how to use the air fryer (principally a small convection oven but with some operative differences). You could probably create content out of it. LOL 375 for 25 mins will definitely dry out small chunks of chicken. And please, oil the food, not the basket. Spray the food with oil before putting it in the basket.

Using panko crumbs ought to work well in this instance. Has anyone tried panko? Also wondering if using a small rack that fits the tray would be useful to "air dry" the bottom part of the chicken nugget when it is in the fridge. Just asking.

I think nowadays, I use my air fryer more than I use my microwave for cooking meals. Also, when you let your chicken nuggets rest after they’ve been breaded do you put them on a rack or do you put them down on the baking sheet? I know for a lot of things it seems like letting them rest on a rack, makes it so the bread doesn’t come off as easy

I just tried this with strips of pork loin, with cloves and ginger mixed into the brine and breading. Also substituted sour cream for equal amount Greek yoghurt, and used grated garlic instead of powder - the result was exceptional, and paired great with the katsu curry stir fry I’d made. Great recipe, and the brining technique works so well!

Hey Bri, no pickle juice in the chicken brine? I hear that's the secret to good fried chicken. Curious if you tried that in your pre-video experiments. For the air fryer method, I actually like to use it to reheat my chicken nuggets. I'll air fry or deep fry them until done, THEN freeze them, and then reheat them in the air fryer for just a few minutes. They're not as juicy as the fresh version, but passable in my opinion. Looks like yours might need a little bit more liberal use of the cooking spray so they're not as splotchy. Hope that helps B-man.
