Its always good to gauge your capacity when bikepacking/touring but you're the first guy I encounter to book a whole month in advance. Haha, not that I'm saying its bad, its good to have a schedule plus you had free cancellation after all. On the context of gauging, aside from the distance and elevation, you should also factor overall body health and bike health. Nutrition plays a big role so preload up on carbs and eat a good recovery meal post. For your bike nutrition, keep your drivetrain clean and make sure its lubed for max efficiency. Also, check your brakepads regularly since you're carrying a lot of weight. The last thing you want on a downhill ride is a wornout brakepad. Sorry to hear about your driving test btw, you should probably start grasping tight to your bike handlebars as practice. LOL
