Long-haired old country boy here. This is a good way to use leftover potatoes. I will try it. If you have an overripe banana, mash it and mix it with one egg and 2/3 cup of oatmeal to make 2 nice sized pancakes. Walnuts, vanilla, and cinnamon are good in these.

I get tired of dishing out cereal or toast, swopped for the odd bacon butty, but its always time in the mornings so am gonna try these and also corned beef hash which I usually have for dinner times served with fried onions and grated cheese in the spuds. Yesterday I did pancakes from a packet and they were much better than the thin ones we used to make, served them with honey not syrup, much better too!!

After grating the potato (s) I squeeze out the water. There are so many other things we can add to these potato pancakes. Precooked onions,zucchini, ham, mushrooms.
