Here’s a mocha cream pie recipe because I know some of y’all need some sweetness in your lives rn Ingredients: Crust 1 cup/ 128g flour 1/2 cup/ 113g shortening 1/2 cup/ 118ml very cold water Pinch of salt Preheat your oven to 350F/ 180C Mix flour, shortening and salt in a bowl. Pressing the shortening to the sides of the bowl with a fork until it becomes crumbs. Slowly add your very cold water until a dough forms. Place the dough on a floured surface. Roll out until 1-2 mm thick. Take your rolling pin and slowly take one end of the dough, then roll your rolling pin back, wrapping the dough gently with it. Get a pie plate and gently unroll the dough out onto it. Poke many holes into the dough with a fork. Cook in the oven for 15 minutes or so. Until the dough is a flakey, golden brown crust. Remove from oven and cool. Filling 1/3 cup/ 73g packed brown sugar 2 3/4 cups/ 651ml milk 1/4 cup/ 59ml heavy cream 3 tablespoons cocoa powder 3 tablespoons cornstarch 3/4 cup/ 130g milk chocolate chips 1/4 cup/ 32g instant espresso powder Pinch of salt 1/2 teaspoon vanilla Mix brown sugar, cream, milk, chocolate chips, salt, espresso powder, cocoa powder, and cornstarch in a medium saucepan on medium heat. Make sure the sugar and chocolate don’t burn. Mix occasionally until everything is melted and thickened. Should have the consistency of pudding. Run the mixture through a fine mesh strainer, and into a bowl. Add the vanilla to the strained mixture and stir. Gently pour the filling into your pie crust. Cool at room temperature for 30 minutes. Then leave in refrigerator overnight to set. Top with whipped cream and serve. Enjoy!
