A few interesting birds I can think of are Drongo (Dark/Flying), Shrike (Normal/Flying), and Fairy Bluebird (Fairy/Flying).

these are great! i also wish they would do more ambiguous mons or mixed unlikely mons. like slowpoke. i believe they say its a hippo iguana. sounds horrifying but the made one of my favs of all time.
