Everyone was a legitimate target, he now describes himself as left of Noam Choamsky and is an SNP zealot. His brand of "risque" comedy when everyone was a target and when he didn't care about causing "offence" was what set him apart, now his dreary left wing comedy just makes him blend in with all the other dreary left wing nobodies like Nish Kumar or Ed Byrne. You're right that the majority of comedians appear to left wing especially on BBC and C4, but given that is the case, why change your act for the worse to become just another one of them?
