I'm studying abroad in Europe and my roommate ask "how can she defrost chicken quickly" (w/o the microwave). So, I told her to put it in some water to thaw out....she said "she never knew you can put chicken in water and if it would loose its flavor?" The look of surprise on my face! So I asked "if she's never washed her meat", she said "no they don't do that in Spain" (where she's from). So I tried to explain to her why we clean our meat etc....in the end she said she won't be doing that because it's weird and she don't want the water to dissolve the flavor. I haven't eaten anything from her as of yet, and after this discussion I will not be.

Looks delicious sir!!!! I am definitely going to try this one. Some baked Mac N Cheese and maybe some seasoned Green Beans or Collard Greens on the side for a little Caribbean-Soul fusion. I need to find a Caribbean style cornbread recipe though lol. Also for some gameday wings maybe stick some in the air fryer for a couple of minutes just to give them a crisp and use that gravy as glaze to be tossed in. YUM!! 😋😋😋😋❤❤❤

Uncle Chris, first, thank you for the video. Appreciate you teaching people about the different green seasonings in the Caribbean. It’s how I made green seasoning so easily lol. It’s basically sofrito with ginger and a few spices. Just a suggestion but, please don’t throw away those beautiful cilantro roots. Pop them in a freezer bag and then add them to your veggie, fish, seafood, poultry and meat stocks/broths. It seems a lot of people don’t know that theres so much flavor in the stems and roots. We use everything but the roots for sofrito. Put the roots and leftover stems in a freezer bag and add them to your broths, thank me later!! Lol j/k They’re especially delicious in Caribbean, LatinX, and Asian stocks/broths, soups, sauces!! This recipe looks delicious!! I’ll be making it for my non-red-meat-eating Mami. I love spicy Caribbean food with coconut rice, avocado and tostones or fried sweet plantains. 🤤🤤🤤🤤🤤🤤🤤

Chris I made mine last night using the slow cooker. Now here me out..I worked 12hrs within 3days and stove top was not an option. It turned out so delicious and well flavored though

If ever I do chicken with skin on I singe off the hairs. To be honest I usually skin my chicken with exception of wings and never done a whole roast chicken yet 🤣...would use pieces and skin itif I do roast dinners. Lovely dish from you Chris.

Just out of curiosity, is it supposed to have the consistency of a traditional gravy? If it reduce as much as you would like, is it breaking the rules to add a little corn starch slurry to tighten it up? Love the channel and all your videos, Chris. Keep doing your thing Chris, we all appreciate you.

No need for cornstarch, just allow juices to reduce. Less gravy - more flavour.

Tried this one, for the most part anyway... put in a little Curry seasoning in the stew, would not have thought of that, along with my usual *out of a bottle* green seasoning, onions, garlic, some stock, canned diced tomatoes... Came out pretty good, little too much Cilantro... But the biggest thing I took from this video is how to burn sugar properly... Thanks

I'm Canadian and I've always washed my poultry. Guess it's cause I grew up watching my Carribean side/family wash chicken. I'm always surprised by how many peopled don't wash chicken. Seen that Will/Chris clip so much it got me noticing how poor Will's Tux fit. Made me go HMMmmmm. Look like it (the shirt) was for (from?) a man bigger than him. Then I realize it don't fit because he lost his spine. lol

In your recipe from 3 years ago you used tomato ketchup, Angostura bitters, and Worcestershire in this recipe. Why didn't you use those this time around? I always avoided making this because I didn't want to buy the bitters, but this recipe has much easier ingredients for me to get my hands on so I'm glad for the change, just curious.

So I get there’s 2 types of cooks, one that wash their chicken ones that don’t. But what both have in common(generally) neither get sick from the chicken.

While you may be right, ppl in the Caribbean were taught to wash meats. Too much slime under skin. Washing with lime, lemon, flour brings a "freshness" to meats and the flavour is way better.
