In Raiders of the Lost Ark, it's not explained, but it is shown. The book that Indy shows to Musgrove and Eaton has a picture of the ark, being carried using wooden poles, by men wearing heavy cloth over their faces. Whilst it's not stated explicitly, it is certainly shown. The inference being that the tome would have information about why they had head coverings and carried the ark in that manner.

Thing that bothered me about Saving Private Ryan was why didn't the sniper stay behind the dead cow with Upham. They show Upham looking at them while attacking the machine gun. Never made any sense but I guess their would be no drama with the German POW.
