Its the fresh animations texture pack. You'll need to download a few mods to go along with it, but if you follow a KZbin video should be super easy!

Yeah sure. Most important thing is to plan goals and have a rough idea of what you want to get done in the 100 days before creating the world. Then while playing the world make sure to takes note of what you did in every day so the editing process is easier.
