I feel you on the shrimp. However, a lot of people prefer it that way which is why a lot of restaurants still serve it that way. Apparently, when it's cooked in sauces and seasonings they say (I say it that way, because I don't think it really makes that much of a difference) the shell keeps the "flavor in". Also the shells themselves have flavor (hence why they're used to make broths sometimes). I personally prefer mine deshelled with no tail as well, but some people think it makes a difference in the flavor. I don't think it makes that much of a difference if it's seasoned properly. Also in a lot of people will actually eat everything, including the tail. So yeah, it is something some people prefer.
