I brewed a Kolsch a couple of weeks ago with Dieter that I got from Steve’s Brew Shop, and I have never seen a yeast flocculate so completely. James was spot-on when he said it flocculates hard, wow! It was crystal clear in the fermenter after just a week, simply amazing. And I like the flavor and aroma characteristics much better than the Lallemand Koln I used for the same recipe last time around. I’ve never used Imperial yeast before, but if my High Road to Taos fermented with Que Bueno turns out half as well, I’ll be a convert. You guys always crack me up, thanks for the great content.

Bringing back bad memories of taking a swig out of a can of Coors in which somebody had snuffed out their Camel straight. That was about 1972 and can still taste it... I am not a scotch fan either. Now smoked salmon.......

Actually Alder is wonderful smoke with salmon. Nothing better. I use it all the time. Unfortunately see there is no Alder smoked available at Sugar Creek but will keep my eyes open.

Dieter is actually an ale yeast - Imperial's Kolsch yeast. But I'm ok with you calling this a lager :)!

I called it a lager because of the temperature I fermented it at. - James
