The food you are eating is Tibetan influenced. The Northern regions you travelled, Kargil, Ladakh, North Himachal, North Nepal, Sikkim, Arunachal were parts of Tibet. The British added them to their Indian-Union.

You've been to the Khasi Hills and Jaintia Hills but have yet to explore the more untouched, less explored part of Meghalaya that is Garo Hills. There are UNESCO heritage sites here as well. The Nokrek National Park and Balpakram National Park. Do visit if possible

This is basically trans Himalayan food- runs in ladakh, tibet, parts of nepal, sikkim, darjeeling, Bhutan, Arunachal. Ofcourse there are local variations over this 3500+ km stretch, but the underlying pattern is similar. To give some background, before China took over Tibet, India and Tibet had open border for millenias. Buddhism spread from mainland india to tibetan plateau over the mountain passes. Unfortunately the islamic invasion destroyed all the buddhism centers in mainland, however, it survived in Himalayas and Tibet.
