Just a tip for anyone who wants to try this for themselves; I would advise adding around 4 times as much raw garlic as that to the yogurt, it really upgrades the taste 🙂

I love garlic and that was my reaction. Just made a chicken dish that called for a whole head of garlic, pureed. Since I was making enough for 10 people, I used about 1 1/2 heads of garlic (endless peeling of cloves!). One of the couples doesn't like garlic but I knew they had had this dish before and liked it. I didn't tell them what was in it and they loved it so much they asked for some to take home.

My Armenian friend taught me how to make a vegetarian version of this pasta when we were in college. Just pasta, yogurt, garlic, olive oil, cauliflower, and paprika. It's delicious.

I bet it would be good with finely chopped mushrooms cooked until crisp. I have a cookbook with a Dan Dan noodles dish that uses this technique. I think it's from "East" a vegan cookbook by Meera Sodha. You absolutely do not have to be vegan to love this book. I'm not. You have to be patient to get the mushrooms to the dry, crispy state without burning them.

We have a similar Syrian recipe called "macarona bilaban". We don't put tomato on it, and we use ordinary yogurt rather than the strained Greek style one, and we mix the seasoned yogurt/garlic sauce into the cooked pasta so all the pasta is coated in yogurt. Then we serve it immediately with the meat and parsley on top (with toasted pine kernels for extra flavour/crunch). Only thing to keep in mind is that it needs eating straight away, as the yogurt can curdle with the heat of the pasta after a time.

I would try it with both beef and turkey. I am sure both will come out great, but Turkey has a milder taste and may effect the overall flavor of the dish

The yoghurt sauce is better with a little salt. Mint also works really well. Not quite a 30 min dish, but substituting cooked lentils for meat is amazing, too.

Looks like a deconstructed Manti to mee. Manti is a Turkish miniature ravioli type of dish, with about the same ingredients as in this dish. The main difference being that the meat is separately cooked and therefore much more crunchy than with Manti. But I guess that the flavor profile will be quite the same. Delicious indeed.

It's actually an easier version of manti, Turkish ravioli. On lazy days we use the same combination, pasta, minced meat and garlic yogurt with peppery butter sauce. Next time I would recommend using ground beef since it's the original version. I wouldn't cook it so much until it's dry. Sometimes I add some tomato paste and even some of the pasta water to moisten the beef sauce. And also use a small skillet and brown the butter with the paprika at the same time, nearly burnt. This makes it even more delicious. While serving, you can sprinkle some crushed red peppers and some dried mint as well.

@phonotical Dad bought Mom an enormous microwave when they first came out. Mist have been 1981, 1982? She cooked the Christmas turkey in it. It looked so unappetizing because it was not browned at all and looked raw although it was completely cooked.

I use the same bow ties for this dish we make at home. Lemon, butter, chicken stock and freshly grated Parmesan cheese, with fried chicken breasts with chicken seasoning sliced with bow ties mixed together! So yummy!

This looks awesome! You can cover butter melted in the microwave. Less mess. 😊 I'd have to tweak this recipe to make it suit my taste. Just one of a few things I'd change is to deglaze the meat pan with 1/4 cup water after it browns. I think I might try putting the yogurt on the pasta to mix it in and warm it. Thank you Emmy!

Serendipitiously,, I just saw this while trying to think about WHAT do have for dinner!... Also.. because of New Years leftovers and ingredients, I have all the stuff to make this! (which I am going to do).. I even have some feta cheese to crumble on the top, which I think will be great. My ground meat mixture is already crumbled and browned from a previous dinner (left over greek lamb burgers) So this should be pretty easy to adapt to what I got. Thank you Emmy ! (as always)

Bow ties are my favourite as they are just so cute. I can't help smiling when I eat them. This dish feels like it should be made with lamb. Just thinking about Turkey makes me think of faithful shepherds leading their sheep through mountain passes. Also lamb just goes so well with garlic/yogurt sauce. That's the combo that makes Greek dishes so good.

I always consider the time it takes for the water to boil as part of the overall cooking time so in the instance of this recipe, I’d definitely say it fits into the “cones together while the pasta cooks” parameters.

In stead of using the microwave: heat the butter in a little saucepan, when it's bubbling hot turn off the heat and then add the paprika. Pour over the pasta just before serving/ eating....way tastier believe me.

i think i wouldnt mind trying to make this. i needed to find more different pasta recipes to make for my kids that they will actually eat. I always find it so hard to flavour the pasta well. in the end no one eats it as it hardly has any flavour 😪. and i have to throw it all away😢. so sad after trying to fix it up better next day and day after but still no one likes it. i feel like maybe i shouldnt even attempt it sometime.😪. your this recipe looks good though emmy. thanks for posting.

My instincts would have told me to toss the pasta in the butter, but it seems like spiced butter as a finishing drizzle is a thing in a few different Turkish dishes I've seen. I suppose you could do both.

- Fattier the beef the better, cook until somewhat crunchy but not too dry. - Before mixing garlic into yogurt, you can salt garlic mince it will extract juices and make garlic taste intensify, but also it will shorten the duration of garlic breath after eating. - If you are a slow eater and having trouble with butter solidifying because of cold yogurt, you can mix a bit olive oil after cooking butter it will keep it as liquid longer.

Dannon whole milk plain yogurt is the closest thing I've found to Turkish yogurt in the USA, and the only yogurt my Turkish born kids will eat. It's not as thick as Greek/strained yogurt, and imo is a better consistency to use on pasta.

I think you have to count the time it takes a pot of water to boil in your prep time. You can't get ground meat to the level of crisp intended in 10 minutes.

i think i would take the yogourt out of the fridge to reach room temp before adding it to the pasta. The turks have a breakfast egg recipe with yogourt, raw garlic and salt. You add a poached egg on top of the garlic yogourt, as well as chili oil/butter on top(Cilbir). I dont like the yogourt cold.
