12 Minute Surf and Turf
A super easy recipe for surf and turf that you can cook in 12 minutes.
Although it may take some time to heat your grill and rest your steak, you really only need to actually cook this recipe for 12 minutes.
We used a strip steak in this recipe, you can use any steak you prefer, but make sure it is a thick cut steak, or you may over cook it.
Make sure your cast iron skillet is smoking hot before you add your steak. Wait until the internal of the grill is 500F minimum.
The scallops only need about 4 minutes to cook at this temperature, depending on the size.
Recipe:
Ingredients:
1 each- 1 lb thick cut strip steak
6 each- large scallops
1 cup- thick sliced cremini mushrooms
6 TBSP- butter
1/4 cup- high smoke point oil, such as vegetable or canola
3 each- fresh garlic clove
fresh thyme
kosher salt
cracked pepper
Method:
Season steak and scallops with salt and pepper.
Heat your grill to high, close lid.
Pre-heat a large cast iron skillet in the oven at 300F for 30 minutes.
Place the skillet directly on the grill.
Close lid and heat for 15 minutes.
Add oil to the skillet.
Sear the steak in the hot oil for 2 minutes on the first side.
Add the garlic and thyme.
Turn the steak and add the butter.
Add the scallops and cook for 2 minutes on the first side.
Remove the steak after 2 minutes on the second side. and let rest.
Turn the scallops and baste with the butter.
Add mushrooms and continue to baste the scallops for 2 minutes.
Remove the pan and set aside.
Place the steak back on the grill and coat with the butter mixture. Let the flames kiss the steak for 2 minutes on each side.
Remove the steak and take an internal temperature. Aim for about 130 for medium rare with carry over cooking.
