For all of you guys in UK, Polish shops :) Fresh yeasts are most basic thing in Poland, we rather don't use dried.

Same here in czech, Fresh yeast is so common you can always find it in the shops even during the lockdown.

@@flopilop3808 Same for Romania, even though you could not find yeast for the first 2 months of the lockdown; Romanians bought flour and yeast like Americans did with toilet paper.

@@sgtjenko I wouldn't freeze it because fresh yeast is made out of living fungus; these microorganisms will probably die in the freezer. But they are dirt cheap so why bother? Keep them in the fridge, in a sealed container, wrapped in a little parchment\baking sheet and they will last for 2 weeks, often longer. If they become dried up and crusty or soft, get a fresh pack :)

In Finland, fresh yeast is available in every grocery stores. Everything is available now, fresh yeast, flour, you names it since the logistic is kinda back to normal 🇫🇮

The same in Denmark. EVERY grocery store, supermarket and discount store like Netto, Lidl and Aldi has got 50 g packets in the "fridge". I'm pretty surprised, Britain doesn't.

UK Morrisons carry fresh yeast in normal times anyway. However the best yeast I have used came from a local micro brewery swapped for a sample loaf made with it. All for the sake of asking!

Like you did the salt experiment, maybe have 2 different experiments with fresh/dry yeast where a friend/family member bakes 2 without telling you and see if you can really taste the difference, and then you do the same to them. see if normal people can also tell the difference. not ripping on fresh yeast as i've never tried it but curious to see if there is such a difference. Love the channel! keep it up!

Although I do have yeast, I just started yesterday with an experiment, so this is a public service announcement of sorts. I took a walnut sized piece of “old dough” from the bread dough I was about to bake. Made a new dough with that as my leavening (no sourdough starter, no yeast, only the small bit of dough). I cut it up in pieces and added the flour, water, sugar and salt to it. It took a long time fermenting, as well as for the second rise, but it did work. Because I was kind of inattentive, I didn’t get as good a result as I think I could have, but I’m going to fiddle around some more. It’s a similar concept to sourdough, I think, but not as drawn-out, and not sour. Edit: My day is made. I got so excited when I saw the video title, I am so lucky that my neighbour miraculously found some dried yeast in Waitrose, so I'm lucky to be able to continue baking

In Chile you can find it near the butter in the refrigerated dairy section of the supermarkets. And right now, the dry yeast is sold out but the fresh is there, nobody knows about it and there's plenty for everyone

In UK you will find it in every east european shop... polish..romanian..etc... 50 g cubes... It is very used in this countries...

If you live in London or another place with shops for Polish people, they always have fresh yeast next to the sour cream. That's where I get mine.

We are making fabulous loaves religiously following 130 video. Made with dry yeast so looking forward to getting hands on fresh yeast once we are free to roam again. Well done Jack we couldn't have done it without you.

I frequently see little cubes of fresh yeast in the dairy case of Star Market (an independent supermarket) on South Main Street in Salinas, California, USA.

Made my first bread using fresh yeast yesterday. It really does make a difference. I managed to get 200g (actually 226g arrived) from a baker who sells on eBay. It was £5.35 which included a printed bread recipe which worked a treat! Thanks for the tips though...might well try Sainsbury’s next time! Keep it up Jack, loving your work!

Another good one Jack. I agree that fresh yeast is best, but these days most people want results fast. A few memories: When I first started baking bread I always used fresh yeast and could easily spot if it was truly fresh or past its best. It darkens with age and becomes softer losing its ability to be crumbled. I just bought 40g, enough for two loaves - I use 680g flour (1 1/2 lb) which was what a 2lb loaf was made from. Now it’s all 500g but I stick to my larger loaves. I then started using fast acting yeast 3 sachets to two loaves. Now I only bake one loaf at a time and stick 2 sachets in (14g). I've looked but can’t find fresh yeast in Northumberland. I'll try Morrisons for greasy after lockdown. When the fast acting yeast suppliers started saying only one rise needed I called customer services it was agreed that for best results one should raise then prove as usual. In earlier days I used to buy M&S wholemeal, baked in store loaves and could always tell the difference between a loaf from the Newcastle store and the Metro centre Gateshead store. Knowing their reputation for consistency I contacted customer services who were adamant there was no difference. Talking to store bakery staff it transpired that the stores had different suppliers of the pre-mixed dough and the Ovens were different. Sorry, I can’t stop myself once I get writing and remembering 🙂

I bought 100g of fresh yeast for 30p today from Sainsbury's bakery today. My local Morrisons has a shelf set aside for yeast, but the staff said that it's on hand rarely. For my first ever use of fresh yeast, I made spelt bread with home milled flour, made from spelt berries with no sifting. The main difference I noticed was in the rise, which was much better (faster) than Fermipan red. The bread had a very good texture, but I did not notice a significant difference in taste compared to fermipan red.

People, do pay a visit to your local Turkish, Polish or corner shops. I just came back from my local Middle-eastern shop, they have plenty of bread flour, all purpose flour, all kind of farina, besan/Gram flour, all kind of dhal lentils, flat bread, cheeses, cured meats, sausages and also FRESH YEAST in amongst all the dairy stuff!! They also have lots of snacks, fresh meat counter cut to order, spices and fresh vegetable, marinated olives and plenty more. Sorry I got carried away.

I go to the baker at Tesco and ask the people at the bakery nicely for some fresh yeast. Get a small bag of the stuff and doesn't cost :)

To add, some of the eastern European shops have them because we tend to use fresh yeast rather than dry.

I've been asking at my local Sainsbury's (Reading) for quite a while but they're not selling it at the moment. I was finally able to get some from a bakery shop in Weston-Super-Mare when I was down there for a week. They were fine about selling it and 'big boss' baker said it's ok to freeze it so for the price of £4.50 I purchased a 1kg block. When I came to do some baking I left the yeast out for a bit to get to room temperature and then mixed it with the water. I was concerned when I didn't get any bubbles but carried on and the first proof worked and I made a loaf and some rolls which were delicious. Next time I'm going to try the breakfast loaf again, my first attempt wasn't that good in structure stakes but it still tasted good. Happy baking everyone.

I make wine, I use a long ladles f scoop it off the bottom of young wine jugs ( brown goo). I feed it sugar and when it starts to foam I use it. The tartaric acid is also in the dregs. Helps a bit of acid in the bread too

Don't worry, it doesn't take very long for the factories to make fresh yeast, and it will be available again very soon - and enough of it. Where I live (Prague) it was gone for a couple of weeks and is now widely available again

In the US you can get fresh yeast from brewing shops, home brewers, or micro brewery. Brew shops will sell yeast but home brewers and mirco breweries just throw out live cultures when their beer is done fermenting. It won't come dry like Jack's, it will come as a yeast slurry. So bring something like a jar to take it home in. Just ask the brewery for some of the 'slurry from a yeast cake' on kegging day. The slurry lasts about a month in the fridge. Don't worry, it will not impart any achohol to your bread.

lol just love the little calming elevator music when you cut and tell us to stay home and not look for it at this time. :P Here in Ontario, Canada, still no dry yeast and I've not been able to access fresh yeast in my small rural town. So, I'm hanging on to what I have for now and watching your sourdough videos in case I run out before they restock which, of course, are much simpler than all the others around. Can't beat Jack!

Start your sourdough starter now, and then, if you run out of yeast, you can roll with sourdough. You do NOT have to use scads of flour, small amounts will do. It's fabulous. Just takes a bit more time.

An update, 5 October 2023. I asked for some fresh yeast in Tesco today, I asked for a small amount as I was just experimenting. I had a block of 360g!!! free. I've divided it into 25g pieces, wrapped up and put in the freezer. I kept out just enough to practice with tomorrow.

I learned about fresh yeast for the very first time from you! And I'm 32 years old! I was so excited because the bread flour I ordered 3 weeks ago finally came, but now I can't find yeast 😫 ! I took some notes from this video and I'm going on a hunt for some fresh/dry yeast.. while practicing social distancing of course... WITH a mask on 😷👍

In Japan we can get fresh yeast very easily online, even on Amazon Japan, but the bags are very large. They are also 'premium products' as they are usually wild yeast from specific regions that have been cultured. Taste great, though. The easiest way to work around the problem (in Japan, at least) is to use a dry granulated yeast that is made from natural wild yeasts. Expensive but the taste is wonderful. Or add a little of your sourdough discard (even just 50g) into a dry yeast loaf. I often feed my starter just a little so I purposely get a small amount of 'discard' to add to a dry yeast bake. I did that yesterday, and also added buckwheat flour and the color, texture, taste, and aroma was heavenly :)

Jack, when I was in high school, I showed all my freinds how to make wine out of grape juice, or apple juice. I was very popular for a while, then the school principal had talk with my parents. Now, looking at your face Jack, I know your a good student, and didn't have any fun like that in school. That aside, after the wine was made, I had all this yeast hanging around at the bottem of my jars. It made pretty good bread, except it was hit or miss. I had no idea what I was doing. Thanks, your channel is pretty useful.

They sell dry, and cake yeast in the states. The cake yeast is in little blocks, called cakes. It's not for cake.

As a Dane, I have never been to a supermarket which didn't have fresh yeast. It's sold in 50g cubes and is usually in the dairy refrigerators next to milk, eggs and dried yeast. It never occurred to me that it might be hard to find in some countries :)

There is a company called BonneBouffe who seem to only sell through Amazon in the UK who sell Hirondelle yeast - 12 *42g blocks for £11.40 and free delivery if you have Prime.

I'm lucky here in New Zealand, I was able to buy from my bakery, they are more than happy to sell fresh yeast to the public and online and they will deliver locally as well and they sell in 250g lots. Can't wait to bake some bread with them.

In Malaysia not many people bake bread. We cant even get bread flour in tesco.. dry yeast they hardly sell.

Sainsbury's have stopped for the duration of "stay home". Tesco might give a bit away, didn't know about Morrisons. I have "Hovis" dried yeast in reserve - all the store had available. I have some fresh in my freezer!!! (Yes, it works for me).

It's harder to find dry yeast where I live, so I always use fresh yeast :)

I haven't watched the whole video yet but Tesco have fresh yeast and you can get a certain amount free, I can't remember the amount exactly. I asked about 4 weeks ago. You can also buy larger amounts.

Hey Jack! Im new here in your channel, but have been spending more time here than anywhere else :) lots of catching up to do... Anyway, i recently watched your video in witch you recommend 3 books, so i went out (online cause we still on lockdown) to seek a little bit more about bread baking history, and its culture. And apparently there isnt anyone talking much about it, like famous shapes, important bakers and bakerys, and stories, etc.. anyway, theres an idea for a video topic.. Germany We have fresh yeast in nearly every supermarket. I'm not pro enough to claim sensitive and trained taste buds to spot the difference between dry and fresh yeast. Yet! However I have followed your advice on a 70% water ratio, and I'm shocked! SHOCKED! My kitchen was a mess. But the bread, man the bread was just beautiful! However, what I would love to know is your opinion on self made yeast. I mean, yeast from beer or if someone would want to be hippie like that, perhaps apricot for a week in sugar water. PS: Good god, you've got fans all around the world, mate! You're a star!

They normal do sell it but have been instructed not to, due to current situation, so that they can produce as much bread as possible for those who do not bake/can't.

Now that supermarkets in my state have put limits on how much flour you can buy, jittery morons can't hoard anymore. Sure enough, supply has sorted itself out. I want to hunt down the people who have to battle panic with baking.

I did endless tests with different types of yeast over a protracted period. Forgive me I found that fresh yeast, which I had used for over ten years, was little different from a instant yeast. What made a big difference to the loaf flavour was using an organic dried yeast. The one I use now the yeast is cultured on malted barley and wheat. Most yeasts, including fresh yeast are cultured on a chemical mix of nutrients. Ask any brewer and they will tell you that what the yeast is cultured on makes a massive difference to the flavour of the beer. It appears to be the same for bread. And, of course a sourdough starter cultured from say sultanas, wild yeasts in the kitchen and the natural yeasts found on wheat grains (with a little live yoghurt for the Lactobacillus) is the proof of this. The flavours in a loaf made with such a leaven has flavours which are far more complex and deep. Well that's my pennyworth FWIW - Cheers - enjoyed your video yet again :)

As a home brewer, I agree fully with what you say. In days gone by bakeries got their yeast from their local brewery to make barm bread. The "barm" is the yeast slurry left over from brewing, but I have not yet used this for baking bread, which I will correct next time I brew. Wasting the yeast would be barmy! In Australia I’ve had good luck asking at bakers delight. Also many Mediterranean delis sell it too.

Brew shops will sell fresh yeast. ... But home brewers and micro breweries just throw away lots of fresh yeast everytime they finish brewing a beer. They would just give it to you for free. Just ask a brewer for 'live yeast slurry from the yeast cake'.

King Soopers in Colorado has it. Check one of the partner stores? Go to KingSoopers.com to see the partners. Probably whole foods or trader Joe, but I'm not certain. Surely Natural Grocers

Our local supermarket bakery used to give yeast away for free but people started taking the p*ss when the word got out and the dried yeast sales suffered so that all came to an end sadly.

All through my baking apprenticeship I used fresh yeast, love the stuff. But unfortunately grocery stores in Australia don't sell fresh yeast, only dry yeast 🙁

Tesco definitely give you it if u ask but not everytime you ask. Depends on the staff.

Oh bummer. I'm in the USA. I'll have to check around at bakeries. Cubes? How much per loaf of bread? I've been using :) very old instant dry yeast only 3 yrs old. Kept in my freezer. But then I upped the flour g's to 444g up 19g cuz it was a nice even number. An the oven is set at 445°F for 30min. Ooh but it's overnight proof. Man! Chewy crusty every bite. I just use a dusting over a cup of room temp water then add the starter. A pinch at least. Cutting a slice was like the knife was the sharpest knife in the world. What? I did run it thru them round white things a couple times. It's so soft too!! Now I wonder how fresh yeast would be.

This is so funny with all the advisories. It’s an indication how much guff you must take from people on a regular basis, 🙁 But when times are better, I think I will look for some fresh yeast and give it a go.

I have just had delivered to me a 500 gram block of fresh yeast ordered from Ingredients for Cooks, based in Norfolk. It cost £5.99. I hope that is helpful.

Hey Jack 😊 How much do you use to 1kg of bread flour? I've looked online and it varies 25g-60g per kg of flour??? I'm in Spain & am a new baker of bread, first loaf was dried yeast, but hub managed to get me some fresh... Desperately wanting to make some, just need to know quantity Xxx

Just use 3% of the flour weight as fresh yeast, if using dry yeast just change the calculations to 1%. Easy as that

I went to my local "bakery". [They dont have much] and I asked them if they had fresh yeast and they just looked at me very confused. Not sure if its just a UK thing but I have no idea where to get Fresh yeast in the USA

How do you compare fresh yeast and mother yeast? I actually came across another myth buster video about sour dough well fed starter vs dead one and the dead one tasted better! How about that?!

Hi, so if my recipe calls for 7g of dried, do I use 7g of fresh yeast, and do I use a bit of the water from my recipe to activate the fresh!? Ty.

Fresh Yeast does not need to be activated like Active Dry Yeast does. It is already active and is simply dissolved into the liquid of your recipe. ☆☆☆Swapping dry yeast for fresh yeast? Use 3× the amount of fresh yeast!☆☆☆ [your recipe calls for 7g of dry yeast, use 21g of fresh yeast]

To convert from fresh yeast to active dry yeast, multiply the fresh quantity by 0.4.

What are the conversion rates? I f a recipe calls for 1 teaspoon of quick yeast in 500g of flour how much fresh yeast should we use?

Wet is double the weight of dry. If recipe calls for 10g dry, then use 20g wet. Jack says in one of his videos. Possibly the plain yeast bread which goes with a Jan 2020 blog post.
