Had my introduction to foodservice back in 1978 as a junior in high school here in the US, more precisely Indiana working for local chain restaurant that is no longer in business sadly. From there moved to Florida and really became inmmersed into the fine choice of working for and under great professional chefs which in turn motivated my desire to make being a cook and then a chef my career of choice. Keep your desire , drive and attention to detail as the hallmarks of your career Nina. May calm sea's and following winds sail with you and Loon in the future.

Maybe not michelin quality food every day. But she makes what she can with one line cook every day. I´d say she´s a damn good chef. You don´t seem to know of all the prep-work needed to be done. And the owner´s might make early changes in the food´s needed to be served so she´s just trying to make the best out of it. I´d say she´s a pretty damn good chef, considering she has to do all the prepping and thinking ahead.

You can have just as amazing of a life without all of the money you would need to buy a yacht and to hire private chefs. All of that shit is a bonus or reserved for the 1 of the 1 percent who were either born lucky or had a combination of patience, hard work, and a lot of luck. It's all in your attitude towards life. Having more money is always nice. You can buy new hobbies, pay for therapy, pursue your passions, retire early, and buy more time and freedom to do what you want. But social media nowadays makes it seem like you HAVE to make millions or billions of dollars to be successful and to be happy. What happened to just grinding and being fulfilled by working a normal job? You look at immigrants. My parents and so many others old and new. Coming from war torn countries, countries with unstable economies, etc. Applying for scholarships, living on food stamps, working multiple jobs. Many immigrants working in kitchens, landscaping, construction, etc, etc, etc. Completely unglamorous jobs. You see any of them complaining? Or ashamed? No, because it's just a job and it feeds their families. One or two generations later and they send their kids to college, their kids get degrees and build a better future for their kids and their kids kids. That's how the world operates. That's why all my friends with immigrant parents whether their Chinese, Nigerians, Jamaican, Haitian, Puerto Ricans, Indians, Bangledeshis, Korean, Cambodian, etc, etc, etc are so intense about academics. About SAT scores, college applications, etc. They read and educate themselves and they’re locked into what they have control of. There is a formula to all of this. Happiness can be found anywhere. There is no need to watch rich people living on a yacht and feel jealous because the rest of the world is fucked up. Yeah no shit. Look at the Palace of Versailles. Forbidden City in Beijing. Buckingham Palace. The Colosseum and the Sistine Chapel. That is humanity in its essence. No politics, government policy, ideology, or whatever will change that. Unless you want everyone to suffer. Be grateful for what you have for what others less fortunate do not have and strive for more without sacrificing the things that are important to you, to your mental health. Give back to the needy and you will get something in return. Don’t overcomplicate life.
