Try dipping them in aquafaba then season them the way you like before baking them it helps with making the outside nice and crisp and the inside nice and soft.

Yes TheAmazingJimmy I have. I have been making them this way for quite a while and I even have rolled them in a well seasoned homemade bread crumb after dipping them in the aquafaba and it made them even crunchier and amazing. Both of my grown daughters have had them and they do not eat vegan or wfpb like me and they loved them. I've also done this with sweet potatoes and they are even more amazing.

I often steam my potatoes and then use my air fryer at 200°C for 20 minutes on the potato slices and it works well - I call them "Chinese chips" as often on the way home from the pub (in the UK) we stopped off at a Chinese takeaway and they did chips (or as they call them in the US "fries") and I think they boiled their potatoes first or soaked them for a long time in water because they had an interesting taste and texture - and steaming and airfrying seems to replicate them to my memory.

Excellent Gabriel. I never thought of the pre-baking thing. Also love this technique because you get the enjoyment of good tasting fries, but your fries aren't overly brown/crispy and thus minimizes the production of acrylamide. Well done brother. Also that Costco saltless salt seasoning is the bomb. For awhile there I couldn't make one of my big ass salads without it. Quite tasty. 😋 Peace

Hi Gabriel thanks for the vid! How long will the baked potatoes keep stored in the fridge please ? - 6 months - 12 months can I freeze them like Bananas and then 8 months down the line when I want fries pull 1 or 2 Baked potatoes out of the freezer, slice them up into fries and bake them for 15 minutes ?

Sorry Melynda, for the wash it is 1 tsp of apple cider vinegar and baking soda. And then I roast them initially for 50-55 minutes at 425

Also, I didn't see you poke any holes in the potatoes before cooking them. Is poking holes in the potatoes unnecessary to keep them from exploding?

Heya female... ok, that feels odd, lol. This is no doubt the video he is referring to - kzbin.info/www/bejne/lafXpJqilsesj6c . Just adjust it for this recipe... you will notice he changes the temperature and duration of the roast at the beginning of the video we are watching here to accommodate the larger size of the potatoes in this recipe. Also, he probably didn't use the seasoning mix he uses on the tri-colored fingerling potatoes he's roasting in the linked video, as it isn't needed to make fries. That would just be a taste thing, not crucial/necessary to the fries, and most of the the cut fries surfaces would not have the seasoning on them... only on the skin. This should get you on point. Or you can do this in an air fryer from scratch and bypass the initial baking period. It takes about 30 minutes from go to whoa using an air fryer :)

@@TheAmazingJimmy I have been living on a potato only diet for 2 months now and air fryer baked wedges have saved my life. I can pretend I am eating chips ;) if they aren't cooked through, just give them a bit longer. Maybe cut them thinner? I like big chunky "chips" so I cut them thick and give them an hour. Make sure to toss them well.

@@stevefranpimblett8257 doesnt matter how ya slice it, they always came out raw and if I left them in the fryer for too long they burn. Boiling them for a few minutes and then frying them works best for me. You should try making microwave potatoes chips (crisps if you're not american). Slice your potatoes on a mandoline, then I usually dip them in vinegar or you can season them how you want (go really light on the salt if you salt them) put a piece of parchment/wax paper directly on the turntable of the microwave and put a single layer of potato slices on it. Microwave for 3-5 minutes depending upon your wattage, then flip and microwave for the same amount of time on the other side, gotta watch them to make sure they dont burn. Healthier and cheaper than a bag of chips/crisps.

Sorry yours don't work :( The boiling tip is a good one :) YUM! Your microwave crisps sound seriously good. Thank you SO much for that idea as they are my very favourite snack food (well they were till I stopped eating oil ;) ) Awesome share right there :)

I think it is important to avoid all processed foods, most of which have added salt. If we do that, it is fine to add salt to the food we make ourselves. The quality of the salt we use is also important. I like Real Salt, mined in Utah. It has many nutrients the body needs and does not have added junk like anti-caking agents found in commercial salts like Morton's. As for iodine, it is available in organic vegetables so if we eat right we do not need to eat salt with added iodine.
