Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

Nice work Winnie! I have done similar work for charity, cooking 300 lbs for Crohn's Disease, cooking for Hometown Heros, etc.. As I own a catering company and always try and figure out how to make a profit in this business, what I do when I cook for benefits and charity is a in-kind donation of time. I cook up the meat, serve it or deliver and serve it, then at the end give the charity an invoice. Which they don't pay but serves as a tax benefit to my company.

Yes, it was my friend’s 16 yo son who goes around businesses and asks for donations. Then he gets everyone involved to cook the food and delivers it to the homeless on skid row in downtown LA

I have smoked pork roasts and always find most of the seasoning flavor from the rub is gone. So it does make more sense to season after the smoking is done. Some people buy rub at $10 for a small shaker container. At that price rub will bankrupt you.

We finish in the oven

I took it off once the bark is formed and add juice/broth/seasonings. Cover and bake in the oven at 325 for another 3 hrs or so until tender.

Then I pull the meat right before serving. The fibers actually absorb a lot of the juices

Harry, just curious... I smoke lard on my smoker next to my pork butts and add a little rub to it then after I pull it I pour the seasoned smoked lard over it... just wondering if you have tried it and if not I would love to see a review video and get your thoughts

The pork turns pink when it’s smoked, there’s no definitive smoke ring that you see in beef but it definitely has a pinkish tinge

Interesting that she chose to cook it in two parts. 🤔 I do a lot of pulled pork. Mainly because it's usually cheap. Cook, pull sauce. Sauce helps seal in flavor. Freezes well also. I could never cook meat with zero seasoning. Goes against everything I've learned about bbq over the last 30 yrs. And yes cooking for the masses is very labor intensive. The prep, cooking, cleanup is exhausting. Have had several people try to get me to open a restaurant over the years. No thanks. Far to much work for the reward.....

In 30 years of experience, I suggest you cook one butt unseasoned and taste it. Life is too short to miss opportunities to learn as I consider myself a life long student as the more I learn the more I realize how little I know. You will be amazed how a perfectly smoked butt from a hog can taste without any seasonings except smoke and love from the pitmaster

@@SlapYoDaddyBBQ I agree with the learning part. But i cannot make myself not season food before cooking. I'm sure there's people that throw a naked steak on the grill for the taste of the beef. Couldn't be me. I've had a love hate relationship with pork as long as i can remember. Raised market hogs for yrs. Still raising hogs to this day. They just haven't gotten the hint that i don't want them in my corn fields. Most prolific animal I've ever came across. I should be out hunting them now while i can't sleep. But i leave most of that to the younger generation these days.

@@lpevans8685 Because i know what pork with no seasoning tastes like. I've eaten truck loads of it. According to what she said she seasons it after cooked. So it's cooked naked then seasoned. I can promise you if given a side by side choice, most are going to want some seasoning. Save yourself some time and money. Everything you cook from now on pull it from the package and go straight to the grill. Don't know why I've never thought of this before.....
