Initially, when I saw the oil poured, I thought she would deep fry the potatoes and keep them aside. Though audacious, I would have accepted it. But then, she cooked the entire thing in it! Its a shame for an esteemed publication like Anandabazar Patrika to even endorse such a video that puts Bengali cooking to shame.

Different parts of Bengal has different ways of cooking. Rarh Bengal (রাঢ়বাংলা) where posto is a staple, people over there would not use turmeric, nigella seeds, red chilli powder, sugar etc to cook posto. Posto there is commonly paired with "maacher tauk"- a fish dish prepared with tamarind pulp, jaggery or sugar and "paanch phoron" ( the five pickling spices), which adds the sweetness in the meal.

Authentic bengali alloposto, we don't need onion..just onion seed, potato and posto/poppy seed paste..also we don't fry the posto otherwise the actual flavour of posto will go...lastly even for deep potato fry, we don't use so much oil..1 tbl spoon of oil is quite perfect for 3 medium sized potato..

If you fry posto, it will have a different taste. However, if posto is added in the end it gives the original flavor. But I guess it's your choice. Also those who are from West Bengal (ghoti) dont use kalo jire or nigella seeds. I love the fried one, without kalojire and with onion as it was used to made that way at my home. I don't like the raw flavor of posto, it feels uncooked to me. Again it is your personal choice. But yeah for sure this lady cooks with a lot of oil in all dishes, where you can practically swim.

+Sandip Nascar Absolutely right. But there is a preparation (peyaj posto) where big chunks of onion is used. The techique is reversed there. Heat up oil, put posto paste, salt and little water, cook for 3 minutes. Diced onion is added last and cooked for just few minutes. Onion should not get too soft.

Wrong technique. Too much oil and she didn't let it heat up to the smoking point. A good cook who knows the tradition will never use turmeric here. Some die hard puritans won't even put red chilli powder to retain the characteristic white color. A thums down from me

Why are you promoting such bad cook? All She knows to put half 'kadai' oil for all recipes. Please delete her videos. Other cooks are far better. Promote them. Please stop putting her 3 years old rubbish oily video link in your paper everyday. Even seeing the video I i feel nauseated.
