For all we know he hit him hard enough for the HELMET to fall off in that scene, and yes he is strong enough to throw a Warthog, but that does NOT mean he can punch off a head, and you never see him decapitate him, it was (as you say) shot from an angle, showing the HELMET, there were no blood effects, and yes, they do use blood effects, remember when he was shot in the throat? Yeah, they use blood. Also the blood from episode 10, tomahawks and CT.
