That’s what I would do! Freeze dry it and powder it! I did that with all my tomato skins and other veggie scraps and added them back to my next batch of pasta sauce as a thickener. It worked perfectly! It was much more effective than tomato paste.

Scraps: Freeze dry and then powder to add to soups and much more. Now you have me hankering to make some vegetable broth to use to make "instant" rice. I've made it using chicken broth. However that doesn't have a long shelf life. Suspect adding using vegetable broth will give cooked white rice a big boost of flavor and when dehydrated will give "instant" rice a much longer shelf life. Thanks for sharing and inspiring.

That is a really great looking broth! This is a great reminder that we need to start making some freezer space and broth is a great way to do that. We never thought about using scraps for broth! Anything that doesn't get preserved goes straight to the chickens or goats but this really gives us something to think about. Thanks so much!

Hi! I keep the stems from cilantro in the freezer so when I make soup I can blend them up with tomatoes and add towards the end of cooking for an extra punch of flavor. I imagine the same would work with parsley. I keep other veggie scraps in the freezer to make chicken broth with the carcasses of rotisserie chickens. I'm not fortunate to have goats and chickens yet, but I'm working on it.

I have a really old, 2nd hand roaster too. I bought it 10 years ago when we moved here and we with 2 teenagers!) ended up staying in a motel room for a month waiting for house closing & our belongings to come in from overseas. It is great! I used it for a slow cooker mostly. Mine doesn't have the flowers on the front. It works as well or better than any slow cooker I've used. Not bad for $10

As a vegetarian I only make vegy broths. Here are some other scraps that go into mine: mushroom 'legs', tomato peals, carrot ends or tops, old looking garlic cloves, butternut squash peal, the 'inner parts' of peppers, and tired old veggies (but I prefer not to use cabages, broccoli or potatoes), corn cob, the tops of leaks or cellery, and the stalkier parts of herb like parsley, dill, cilantro, lemongrass and thyme. And lastly, the ones to be cautious with (a little goes a long eay): Ginger or galangal scraps, sage, kefir lime leaves, allspice 'peppercorns', aniseed or fennel seeds or flowers, mustard leaves, seaweed and chile peppers. I never use all at the same time, but adjut to what I have or my plans for the broth. If i'm going for Asian flavors, i'll use the relevant aromatic scraps, if i'm going Italian or French, more of the wholly trinity of carrot-leak/onion-cellery and herbs, but not too much, for a lighter, fresher aromatic touch.
