1 kg of beef in cubes
2 onions chopped.
100 gr o thick bacon in little cubes
1Tbsp of butter
1Tbsp of oil
2 dark beers
2 slices of bread smeared with mustard.
4 cups of beef stock
1/4 cup of molasses
2 crushed garlic cloves
season the cubed meat with salt and pepper.
-In a Dutch oven or a heavy bottom pot combine the oil and the butter on medium heat until its melted and it starts bubbling
-brown the meat in batches being careful not to overcrowd it. And set it aside.
-deglaze the bottom of the pot with a little bit of the dark beer.
-add the bacon and onion and cook it for 15 minutes.
-add the dark beer, garlic, meat, beef stock and molasses
-mix it all then lay the 2 pieces of bread and mustard on top. Bring to a boil, cover it with the lid a bit off set and simmer for 2 hours.
-mix it all together. the bread will be dissolved and absorbed by the stew.
