I love your Sunday Morning Old Cookbook Show. More importantly, it has given my autistic 14 year old grandson many recipes that he wants to try. Five years ago, when I got custody of him, he was a McDonald's Only eater. That has changed dramatically over the last 5 years and he's even learning to cook, inspired by the things on this show.

Ooh, Egg Casserole! (aka Strata). My Midwestern American family makes this often for brunch. We usually add ham or sausage, a little bit of flour, and let it soak overnight in the fridge. Also cube the bread, don't both removing the crusts, and just use melted butter poured over the layers before adding the custard.

We do the same thing! We make it as a holiday breakfast. Fix the night before, bake in the AM and everyone can eat at their leisure. Mom used velveeta chunks instead of shredded cheese.

I often make almost this exact recipe as a Sunday night supper in fall/winter. I use cheddar cheese, and substitute a portion of the milk with a flavorful beer to give a Welsh rarebit flavor. I also add either cayenne or hot sauce. Leftovers warm nicely for breakfast.

I've been making this for years. I sometimes add pre-cooked bacon pieces or cooked crumbled breakfast sausage. It's a great breakfast dish.

Greg, Jules, and fellow fans of good-horsekeeping. I would have buttered the crusts and layered them on the bottom and served the top during the tasting. I too love the crusts. I used to bake bread just to have a crunchy crust to enjoy with butter. In the 1970s I had a goodhousekeeping international cookbook that was happily used for decades. Jim Oaxaca

This is a great recipe to use up leftovers. Soft, steamed cabbage, cut into squares along with diced ham, are delicious additions.

I looked in my Mom’s old Good Housekeeping cookbook (late 1950s) & found recipe called Cheese Strata which is about the same. Only difference is some minced onion & dash of cayenne. I’m sure I’ve made it too. I also appreciate Glen’s old depression era recipes.

I agree Glen leave the crust on! I could see an Italian version with garlic bread, with mozzarella some Italian sausage, a few dollops of marinara sauce in the middle, with marinara served on the side as well.

Eight ounce packages of shredded cheese from the grocery store are usually marked as 2 cups, so 4 ounces per shredded cup is pretty safe. My step-mother made a similar dish that was basically cheese sandwiches covered in custard. She took it to carry-in breakfasts for various organizations.

I'm 2 years late to this demonstration but couldn't resist pitching in the idea of using a flavored (onion, rosemary, dill, etc) bread in lieu of a standard white loaf. Perfect base recipe for a springboard to countless combinations. Thanks from one of your southern neighbors for this pudding (=USA Strata) recipe!

This dish is my family's traditional Christmas morning breakfast. My Great Grandmother had a copy of the same cookbook you 've used. And the recipe has been passed down from generation to generation. We have changed the recipe a tiny bit over the years. Instead of the shredded American cheese we use the American cheese slices and let it set in the fridge over night to really allow the custard to fully soak into the bread. And we always serve it with raspberry jam.

When you started mixing the custard, I immediately thought of adding mustard and/or horseradish to the mix. So glad to see the mustard in there. The pickled jalapenos sound like a great addition.

I saw this and immediately recognized it!We've been making a very similar recipe since the 1970's or 80's. My mother acquired it from her supervisor. With some slight variations. We buttered the dish, buttered both sides of the bread which was not fresh or cut in pieces, also more cheese and it was supposed to soak overnight. We called it Betty's egg 'souffle'. I love it in the morning with hot sauce

Looks a lot like a breakfast dish my mother-in-law makes. Twelve slices of white bread buttered. Put six butter side down in a rectangular casserole dish. Chopped ham and cheese layered on top. Then last 6 slices of bread butter side up. Pour egg and milk mixture over the top. Can’t remember the amount, but probably 6 eggs and at least 3 cups milk. It should fill up the pan. Let it soak overnight. Bake at 350 until top is brown. Serve it up by either half slice or full slices. Looks kind of like a Monte Cristo sandwich.

2 minutes in and i think i recognize this recipe as something i used to make out of the Joy of Cooking called "Cheese casserole" if i'm right I absolutely looooved this when I was pregnant and getting tons of bread, eggs, and cheese on WIC that i needed to use up. Edit: upon watching fully it definitely is that. Great to see you guys liked it as much as I did.. I might have to make this again sometime!

I literally made this dish for over 6 years at my last job. Almost everyday!!! The place is known for it. They call it cheese soufflé. It’s a you’ll love it or you hate it type of dish.

I have a Good Housekeeping Cookbook from 1955 that I inherited from my mother. It has a recipe for Baked Cheese Pudding and also Cheese Strata, both of which look very similar to this.

This is also what they call a Strata or Stratta. I started making these years ago after Christine Cushing made an awesome one on her cooking show on Food Network back in the day. However, normally the bread is cubed. I really like this way of buttered slices. I will have to give it a try 👍🏻

I wasn't expecting that to look as good as it did. I'd definitely try it, though. Also, toward the end, when you talked about using the ingredients available during the Depression, "You had some stale bread, some eggs, some cheese..." it kind of had the same rhythm as the Facts of Life theme song.

I recently did some work in my kitchen which required moving things. I found some old cooking pamphlets. Not really books, very thin. Most are from a sugar beet company. One is from 1928, but most are from the 50s. Pretty cool.

My Mom would save the crusts of bread until she had enough to fill a casserole dish. By then they were stale which I think made them suck up the milk and egg mixture. Everything else was the same as this recipe. I loved it! (This was back in the 60's and 70's)

I know this recipe as cheese strata, suitable for lunch, dinner, or brunch. My grandmother called it cheese fondue, but she was born in 1880, and I learned to make it in the 1970’s, when fondue referred to Swiss fondue.

It came out pretty well. I cut the recipe in half as the cookbook suggested and used stale whole grain bread and medium cheddar. It’s a tad bland for modern tastes, but not bad. I can see a little breakfast sausage or sautéed onions livening it up.

Someone in the comments may have said this but this method works really good with stale bread too! Or croutons. This is essentially how I make breakfast casserole but then of course I'll mix in cooked bacon or sausage or a can of Rotel or something for flavoring. It's definitely a versatile recipe.

Ad some ham and it is exactly what I call a strata. I used the crusts to fill in any gaps between the bread slices. It adds texture.

Looks great. Very moddable as well. Could easily play around with the type of cheese. Throw in some ham or bacon. Substitute some of the milk for something else. Definitely going to try this.
