#蕃茄雞蛋湯麵 #ChineseTomatoandEggNoodleSoup
這道菜是獻給我的閨密Amy
她說想知道怎麼煮更好吃,索性我就拎著鍋子到了花園拍了這個超好吃的蕃茄雞蛋湯麵!
材料(約2人份):
牛蕃茄2顆
雞蛋2顆
蔥1支
蒜末2大瓣
辣油
醬油1大匙
糖1/4大匙
鹽 1/2大匙
高湯2大碗
雞蛋麵
白胡椒粉(隨意)
做法:
1. 蛋加鹽打成蛋液、切蒜末、蔥白部份拍鬆切段、蔥綠部份切成蔥花、蕃茄切塊。
2. 鍋中倒油爆香蒜末、蔥白。
3. 香味出來加入蕃茄翻炒,稍微煮一下讓蕃茄味釋放更多,加入蛋液推散,加入高湯煮滾後加入麵,淋上辣油、蔥花更好吃!
👉*小秘訣:1. 蕃茄炒過煨煮味道才更好。2. 事先製作辣油淋上讓麵更有層次!
Ingredients for 2:
2tomatoes
2 eggs
Spring onion
Garlic 2 cloves
Chili oil
Soy sauce 1tsp
Sugar 1/4 tsp
Salt 1/2tsp
Stock 2bowls
Noodles
White pepper powder(optional)
Method:
1. Whisk eggs, chop garlic, cut spring onion white part, chop green part, cut tomatoes into chunks.
2. Heat up woke with oil, fry garlic and spring onion white part.
3. Add tomatoes and stir fry, simmer for 2 min to get more flavor.
4. Pour egg and gently stir, add stock and simmer for 5min, serve with hot chili oil and chopped spring onions.
👉*TIPS:1. Fry tomatoes to let it tastes more flavor, more rich. 2.heat up chili oil beforehand, add one tsp of hot chili oil can bring more additional flavor to the soup!
