Villa René Lalique, Aalsace: Michelin star restaurant that has 2 Michelin stars. How can that be possible? In this exclusive documentary, you will see how the Michelin starred restaurant is organized. And you will see two great chefs - each had Michelin stars before and now working at Villa Rene Lalique.
Chef Jean-Georges Klein has brought 2 Michelin stars to Villa René Lalique. He has joined the kitchen back in 2015. Since that time the restaurant is always fully booked. Did you know that Chef Jean-Georges Klein was working as a head waiter until age 40 before applying his passion and perfectionism to cookery.
Klein got the first Michelin star back in 1988 (he had a family restaurant at that time). The second Michelin star came in 1998. The third - in 2002. Two years later, Jean-Georges was nominated ‘Chef of the Year’ by the Champérard fine dining guide. Chef says: “Every day, I try out unlikely combinations and contrasts. I take the risk...”.
On February 1, 2016, little more than three months after opening, Villa René Lalique was awarded two Michelin stars.
Some more quotes from Jean-Georges Klein:
“The taste always comes first. The taste is most important. A lot of people say: I'm doing an evolutionary kitchen or modern kitchen. They make blends and things that have no sense. And it will be nothing but beautiful. If it's not good, it's nothing. The «beautiful» will be nothing in a plate. Food must be good before all. Beautiful after. Beautiful and good - that's good. But only good and not tasty - it's not the way you should cook. I am categorical”.
“Actually, the reality is… For the same price that you pay here, you may be able to eat a pizza once. But if you want something exceptional, you can have tasting menu here, at 2 Michelin stars Villa René Lalique”.
“I cook evolutive. We are not into the classics or total modernity. We take the base of the French cuisine. And we begin to evolve through new techniques...”
In October 2017, Paul Stradner, the previous two Michelin-star Chef of Brenners Park-Hotel & Spa in Baden-Baden (Germany), joins Chef Klein to preside over the kitchens at Villa René Lalique. The two Chefs have worked together for a number of years and there is a close affinity between the two men, in both culinary and personal levels.

I would have liked to see the images for a longer time. It seemed to jump too early from one image to another, I found it difficult to see because of this.

@@nikkijaneallison Hello, I work in this restaurant and the average ticket is around 255 USD ! The cheapest menu cost 95 dollars without drinks

The video is great! I really love documentaries focusing on restauranteurs and chefs. I'm especially interested in the story behind the chef - how they got there, what inspired them, hardships and sacrifices, etc., and am definitely more interested in the process of creating the food more than the end result. I especially *loved* the behind the scenes tour René gave! That was pretty unique. I would suggest less scene cuts and sped up clips for future videos. I was referred here from the r/documentaries subreddit.

I admit, i was shocked to see the cooks handling so much food with their bare hands. It looked like they were touching everything and not a glove in sight. But it was still a facinating video.

The more I see and go to these types of restaurants the more I’m realizing they all serve the same thing caviar, tartar , scallops , white fish and some type of sorbet for dessert and always Granny Smith apples why is that are they really that unique

You shit on a plate stick a little bit of gold leaf and price it at $500 a plate. And shit will sell i'm telling you i can't wait to start my own poopoo platter restaurant!🤣🤣🤣

I can’t tell what I love about this restaurant cause I love everything 😊😊😊 However, if I have to name 1 thing. I’ll pick the statues cause they are so beautiful and delicate.

Despite that have a clearly french classic base that man looking forward with classy and smart. The silence in the kitchen the guest book organization and all the aura in the restaurant and the dishes are very conteporany. I ask but its my opinion a more clear description of the dish but this video looks like more focused on all the structure.

Not at all . i can only suggest if you travel in copenaghen to try restaurant Relae. I wish to eat there but i cant find nobody that have eaten or do a video about . they have a very nice philosophy about soustenibility. From farm kitchen and wines

Raw langostine with some berries and pomegranite, salt? Its kind of pretty, but be honest, if u were at someones home on the couch and served it on a styrofoam plate, you would not be impressed at all. The beautiful atmosphere of the space makes 95% of that dish. French are master dairy users though.

Hahaha, you missed the point. It is a mix between classic french cuisine and modern cooking technics. If only you had the opportunity to eat in this restaurant you'd think differently. The main goal is to work with local quality products with new textures and mix of flavors. The chef is one of the greatest in the world. Incredible place.
