I'd recommend to start with blank, the website template is quite complex and can be overwhelming. Although you can always set one up with the website template and analyze it thoroughly to learn all concepts

why mongo DB and not Postgres, can i use postgress ?

For this project you should be fine using any db, although mongoDB has the best feature suport with payload
