There are two common types of basils: "Thai Basil" has a purplish stem and a stronger fragrance usually used in Thai, Vietnamese and other SE Asian Cuisine. Sweet Bail is a softer fragrance and its usually seen and eaten with Italian cuisines/dishes such as Caprese Salads and Pesto Sauce. Mark Wein's dishes has about four different spice level and the fried eggs are duck eggs...it is also cooked in a special way as they add the yolk on mid way after frying the egg whites well to retain the runniness of the yolks.

Simply by the way you slurping up that to die for noodles is making us hate your food content in Thailand= we are very-very, extremely jealous that we have to wait another 11 months before the dream food trip in Thailand. We also already prepared in our head that to be con by the Tuktuk driver in Thailand is unavoidable and will treasure the lighter side in seeing it as an experiences when it happens to us. Food choices in Thailand is heaven on earth and taxi or tuktuk in Thailand should be strictly governed in fair pricing standards.
