I lived in Chennai (Madras) India. The spices were so fresh! When I returned to the USA, all the spices tasted flat. I also had to use less spice in my recipes while living in Chennai such as less cinnamon, less cardamon, etc. because fresh spices are stronger. Go 30 minutes up the road and language and cuisine completely change. Amazing diversity in India.

My mom was Mexican. I grew up in California and have tried many cuisine, Asian and middle eastern cuisine, and I have to say my favorite is Indian. Especially the spicy stuff. This video reminds me of my mother's family, where it was a challenge, whose food was hotter. And also how we expect everything to be fresh and colorful.

My daughter is half Honduran Maya & Salvadoran indigenous & she says the same referring to her dad's side. My ex-husband taught me how to make many Honduran dishes. I also lived in Cali for a few yrs (I'm from NY) & I learned how to make other dishes from my Mexican, Guatemalan & Salvadoran friends. I've made all of those foods many times throughout my daughter's life. Now my daughter is an adult & makes those dishes, plus more that her dad taught her. She loves Indian food & especially the really spicy too. 🙂💕

A+...😊....This is the best Gordon Ramsay show ever. I loved that you showed me the culture and you took us through the entire adventure. The people of India were all endearing. The driving was crazy and fun. The landscape is amazing from the coast to the mountain highlands. Many excellent ideas for cooking tasty and delicious dishes. Getting the ants out of the tree was funny and dangerous. Not sure it's worth risking your life over but heh...great television exciting tension contrasted with grateful relief by those wonderful ladies with their honest opinions. I am now a BIG FAN of India and love Gordon Ramsay more for showing me the India I have never seen or tasted.😊 Thank you all.

In this part of the video I remember years ago when I was in morrocco and my friend asked me to cook for his brother wife family and friends so I go a International menu as me,him and his wife helped me and she was watching me cook every dish and kids were there to and they all enjoyed everything because it was very different and I even made some Chinese dishes with American dishes and some Hawaiian dishes and I didn't charge them a dollar it was on me as a treat from America and NYC

Brought back a lot of good memories of food from Kerala Kitchen here back around 2010 to 2016 when worked around the corner from that place. Super fresh, spicy and vibrant. Thank you to Gordon Ramsey & Nat Geo for a great video & love the beautiful Indian music throughout. That type of Indian music is so calming & relaxing. The Sitar is such a lovely instrument. I love to cook & I've memorized some of Ramsay's recipes & tips. Abt once a month, I make an international meal that I never made before. It's so much fun & there's several recipes from other countries that I've continued to make. I also learn abt or more abt each country, which I think is really fun too.
