Hi, some advice about hygiene, these are the things that most locals do: - The tables are not sanitize, so don't put your hands or culteries on the table. - rub your culteries with a clean tissue or a piece of lemon/kumquat, and if the broth is hot, dip them in the broth to kill as much germs as possible. - You held the chopticks up side down. There are a bigger end and a smaller end, you should hold them toward the big one and pick up the food with the small one. Also notice that in the chopsticks container, they usually have the smaller end on top, that way the smaller end (which will touch the food) is exposed to the air and is cleaner. Hence avoid picking up-side-down chopsticks from the container. Some more advice about vegetarian options: - Almost all noodle dishes are non-vegetarian since the broth are usually made with bones and/or fish sauce. - If you see a brown-ish or yellow-ish dipping sauce, that's fish sauce. It's quite easy to recognize the taste and smell if you tried it before. - Unless there's the word "chay" in the name, it's most likely non-vegetarian. - There are some snack dishes with a few simple ingredients and you can see how them are put together, those can be vegetarian. - There are several "chay" restaurants that sell vegetarian food exclusively, you can find them on google map.

“Bánh cuốn” - the dish your wife tried, the dip is made out of fish sauce with sugar and some vinegar. Some places they add in pork bone broth to enhance the flavor (as pork bone broth after long time simmering will provide a natural light sweetness). So she was right, it’s not really a vegetarian dish. Almost all the foods you guys tried in the video are the must try foods when you come to Vietnam. Hope everyone had a wonderful time and experience there.
