The only thing that makes Pho in the States not as good as Pho in Vietnam is the Pho Noodle. Most people think Pho is the name of the broth but it is actually the name of that type of noodle. Most Pho places in the States use a type of noodle similar to Hu Tieu, which makes Pho in the States not correct. The only thing that stands out is that the beef in the States is so much better than in Vietnam. That bowl of Pho has the best of both world when they use the fresh Pho noodle.

few comments here from a pho lover. Mikey is right. Some places put too much star anise and it ruins the dish completely. Also, you know the broth is the best when it is clear as water. A murky broth means a half baked pho joint. I once saw a pho joint pour carton broth into the vat. Pathetic.
