15:21 I think the duck is smoked first then fried or roasted. You get a similar flavour to beggars chicken or duck where the bird is rubbed in salt then buried for 6-8 hours in the ashes of a wood or charcoal fire.

Fried mush is like fried polenta, a favorite of mine back when i could eat carbs. But biscuits and gravy was a real treat. Whenever I drove to or from my college town, I had to stop at a truck stop at the middle of the route. It was called "Dixie's", and they had the most wonderful food. The biscuits and gravy was 2 or 4 biscuits the size of your fist, flaky instead of crumbly, and a soup bowl full of thick and rich sausage gravy. Utterly delicious. I opted to get the two biscuit order with a couple of scrambled eggs, and some hash browns. Broasted chicken is indeed better. Theoretically, KFC started with broasting, but it's easy to cheap out on it by cooking the chicken TOO fast. It's cooked completely, but it isn't nearly as crisp and juicy.

Der Dutchman always good food. Unfortunately over the past few years they’ve gone to some cheaper ingredients. Used to be real potatoes for mashed, now taste like boxed. Cream pies were real whipped cream but now fake cream topping and the price has gone up. Overall Chicken fab, great ham n meatloaf. Excellent salad bar and their fudge is to die for. Place n bathrooms always clean. All the peeps are nice and very very hardworking folks! Glad you got to try it out!

The fried crispy hash browns look more like Swiss Rostï - shredded batter fried potatoes loosely clumped together into largish a pancake. Hasbrowns should be a bit more compact.

In Utah we call cheesy hashbrowns, Funeral Potatoes. We cook them au gratin style and top them w crushed corn flakes w melted butter and it bakes a sweet crispy crust. It’s our State dish

Have you ever eaten at Lambert's? It's in Southern Alabama, and it's on the way from Florida to Louisiana - It's the place where they throw bread rolls at you upon request. Southern comfort food (I recommend the chicken fried steak) and servers wandering around constantly offering side dishes that are simply included.

I've been to Miller's Bread Basket in Blackville, SC and Yoder's Deitsch Haus (Mennonite) in Montezuma, GA. Both have wonderful food and fantastic breads, cakes and pies.

I've been in that square in Ocala many many times. Some really good places to eat right around the square and then just north in Gainsville there are several good Asian restaurants... awesome korean place, a really good Thai fusion joint... you should visit again.

OMG I miss real food.. lol I grew up in Amish country..those "potato wedges" are called Jo-Jos or broasted potatoes. That's their normal size and they are best dipped in sour cream. I haven't had them since 2014 :( fried mush I haven't had since I was kid and I've been unable to properly replicate that either.

Mikey you should take sometime to lookup doctor anthony chaffee .. he is a carnivore proponent but his research into the food and medical industry, you maybe surprised by what actually is healthy .. is right up your other channels alley so to speak :) just as a side note.. i went on keto jan 2019.. down 82lbs moved into keto carnivore this year .. and i eat 2-3lbs of food a day . :)
