How do they match water, ph hardness to that of the koi’s home conditions.

They really don't make a huge issue about such things to be honest

Koi can adapt quickly as long as they move to a clean water, although they prefer to move to a warmer water rather than the colder one.

I think most of the water in japan has similar qualities if from a non treated source. You would probably only see issues if they were put into water from another area/ or country with vastly different hardness/ph

There is true preference toward the White and Orange. Breeders will stop bring anything else if only one kind is ever going to win. Why bother with all the work.

There are many prizes beyond the Grand Champion. Yes there is a preference to red and white 'Kohaku', they are simply the most refined and the original variety of Koi, hence they win many Grand Champion prizes, although not always.
