Any side effects of removing the canister?

Nope. I think pinning that electrical connector is needed to not trip a check engine light, but I don’t know for sure bc I never ran it without pinning that connector. But no downsides, and plenty more room to work on the bike. The canister is some carbon/charcoal filter which filters the fumes from the gas tank, and feeds some into the engine, it’s not needed at all and only used in the US market as far as I know
