For the sleep tracker, it will be the day before. Example. You go to sleep Sunday night at 8pm and wake up at 6am Monday you got 10hrs (I wish) of sleep Sunday night. The Hrs will be put on Sunday not Monday because you haven't went to sleep yet on Monday.
