I am a young doctor in Poland and even though my freezer is small I try to stock it up with homemade freezer meals, you are a huge inspiration. I work long hours and if I don't have anything ready I will order unhealthy takeout so your videos are a life saver for me. I usually make recipes that are fully cooked or cook and then freeze and portion so I can take some with me top the hospital and reheat and my boyfriend at home can just reheat some for himself. I need to step up my freezer meals game, because they take me enormous time to do, so I need tips how to speed things up

I want to thank you. I’ve very recently found your channel. I’m a stay at home mom of 3, two in school and one just walking. My husband works nights, so anything that helps keep my day structured with meal prep but also keeps the sound down is so helpful. This not only helps our family function, but helps me function around my mental health as I struggle very badly with ADD and disordered eating. I’ve never thought of NOT freezing gnocchi! I do a pasta day twice a year. I make all my homemade pastas at the same time. Including with the pasta I make and dry; I also make potato, sweet potato, butternut squash, and pumpkin gnocchi, ravioli and stuffed medallions, tortellini and cannelloni. I shrink wrap and freeze them all. I’ve never had any issues, and I’ve never thought twice about it.

I recently tried making homemade gnocchi, which actually wasn’t as hard as I had expected it be in my head 😂. I ended up doubling to freeze some. I flash froze them on a sheet pan and then through them in a freezer bag. I was actually thinking of throwing them in a gnocchi freezer meal soon. I hope it all turns out! 😅😊

I think you can just omit the onions. They don't contribute a whole lot to the size of the meal. Just the flavour. If you were to substitute, I would go with celery. We almost never have celery in our recipes because Sharla is allergic. If a recipe calls for celery, we omit it and it turns out just fine. I think any of our recipes would be ok to omit the onions. There aren't any that are so onion-heavy that it would alter the dish to where it's inedible. Go for it!

For the ground meats: beef, ground pork/sausage, chicken and turkey, we usually brown it first to give us a chance to drain excess fat and we like the texture better. It mixes into the meals nicer when it's crumbly. We don't pre-cook it for things like meatloaf and meatballs. We sometimes cook and cube chicken depending on the recipe. If it's something that will be a quick reheat or fast fry, we like cook it first. We also like to cook it first if it would make for a suitable individual serving. It's tough to cook a single chicken breast and have the right ratio of seasonings, sauces and have it turn out nicely. We just find it best to cook and reheat in that case. Another example is something like BBQ shredded chicken - the chicken needs to be slow cooked to be tender and that's tough to do with one breast on it's own. I hope that helps.

l freeze Gnocchi all the time and nothing happens to it, it cooks up right.
