Gougères! I love them! Once you have mastered making them, leave out cheese and spices and voilà, you have a base recipe that is so versatile! You can fill them (cut with scissors still warm) with honey and cinnamom flavoured cream, or make an instant coffee flavoured butter cream (butter and powdered sugar equal parts) with a glaze of coffee and powdered sugar! Make them longish and call them éclairs! Or fill with a ham dip or cream cheese and salmon or ... So good! Such a good idea! And I already noted your bacon plums to my Christmas shop!

I like your suggestions! My mom made cream puffs for years with a similar recipe. She would sometimes make big ones and cut them part way, and then make a bowl of lemon curd mixed with whipped cream or cool whip and or chocolate pudding mixed with cool whip and put spoons in them and let people fill their own, like a cream puff buffet! FYI - you can also freeze cream puffs with the filling in them. That's with a vanilla custard type filling. I would suspect it would get soggy so I haven't tried it, but you could also freeze them before baking and fill them when you go to eat them.

@@FreezerMeals101 And if you bake pencil-thin little S-shapes and cut the top in half you can make easy peasy little swans with whipped cream filling and dusted off with powdered sugar. So fancy on a mixed platter for a festive cake buffet.👩🏼‍🍳

Really? I've had many people ask and I've said ok. It's usually just a warm up. I think I've done it at other people's houses. But maybe it's because we were all close friends, or it's because we live in the country and if we have to drive 30-60 minutes to get somewhere, the dish will be cold. But to each their own!

I find that to be an unusual response. Whenever I’m asked to bring a dish something is always needed by someone: stove, oven, plug in crockpot, serving spoon, etc. Not a big deal where I’m from. Maybe regional tradition?

They are a bit sticky for a cookie scoop (I honestly read that the first time as cookie soup and I was definitely going to ask you about it!!!). If you put them in the fridge to harden up again, they might be too hard for a cookie scoop, so you'd need an in-between solidity. We are getting sciencey here! lol

My husband has had three detached retinas, so I understand how difficult that can be. One happened two years after he had LASIK (ruined that) and three weeks after I’d had LASIK (scary but still fine 24 years later), and once was two weeks after cataract surgery. The doctor didn’t tell him not to fly for a certain period of time after the procedure. If you need cataract surgery, please, ask about that. Just subscribed to your channel for the great ideas.
@FreezerMeals101
@FreezerMeals101 6 күн бұрын
Wow! That must have been terrible! Three times! I went for my follow up appointmen yesterday. Aside from still having the odd floater, my left eye is healed. The doctor then reinforced the thinning spots in my right eye with the laser. It feels pretty good today. He said that spot will never be a problem for me. I suppose it's possible that as I age, my retinas will continue to thin in other spots, so the potential of another detatchment sill be there but I have a terrific eye doctor and I trust that he will watch out for them and advise me appropriately. I will keep in mind about the catact surgery in the future. I'm sure I have a few years to go before then, so hopefully I remember!
@dale3404

I hope you continue to heal well. Keep up your regular checkups. When my husband had his first retina issue, our ophthalmologist met us at his office on a Sunday, and my husband’s law partner showed up with an emergency because he’s fallen asleep with his contacts in! Life is crazy. Oh, another cray thing: the doctor who did my husband’s cataract surgery was known as the doctor to the stars because he was world-renowned for his skills. He had done cataract surgery on loads of famous people. I’m a new subscriber, looking forward to more great recipes.

I, unfortunately, have a texture issue, so mushy pasta (and rice) really bothers me. I let the cooked pasta dry out then add to a freezer bag. I add the pasta to the dish before preheating, and it warms up along with the sauce. Thicker pasta, such as lasagna noodles, don’t get as mushy, but thin noodles do. Undercooking them does, indeed, help. Thanks for these videos, since I’m ready to cook for,the winter. Hurricane season is almost over, so I can start filling the freezer.
@FreezerMeals101
@FreezerMeals101 6 күн бұрын
That's a good way to do it. For us, undercooking the pasta seems to do the trick to maintain texture, but it's good to know that you can take it a step further if we come across someone else who struggles with the texture. Thanks so much!

They have a similar texture to a blueberry. They are a little sweeter than a blueberry but their actual flavour is like nothing I can describe to you. Maybe like a haskap? I wanna make ginger salsa chicken. Salsa is not a common thing here in Singapore. I might make salsa from scratch 😅
@FreezerMeals101
@FreezerMeals101 9 күн бұрын
Yeah give it a try! It's not that hard to make. Raw tomatoes go a bit watery and mushy when freezing, so you may want to use canned or cooked diced tomatoes or cook your salsa to mimic salsa in a jar. Cooked tomatoes are also watery and mushy, so you could probably skip that step but it's something I just wanted to point out. Good luck with it. Let us know how it goes. :)

Thank you so much! I was shocked to hear the doctor say that I could drive the next day and work! When I had lasik eye surgery years ago there were huge restrictions like no scuba diving or sky diving - things that would change the pressure in my eyes, plus a whole host of other restrictions for months. It did knock me on my butt for longer than I expected after his flippant "you're healed in five minutes". Like, technically I guess I was, but my body said otherwise! I have a few social things that I am signed up for on the weekend and I'm hoping to attend the Live cooking class on Saturday but it's forgivable if I just can't. Most people don't start with filling their entire freezer. We recommend starting small and doing things like doubling your dinner. Eat one and freeze one. Over time, you'll be able to build up a stack which allows you to save money. You go to the grocery store less, you definitely hit the drive through less, and it's proven that eating at home is cheaper, not to mention healthier. One of my favourite testimonials comes from one of our Club members who said she saved 60% of her normal food bill by using the Club and making freezer meals! So yes, there is a cost for the system, but making meals this way is definitely something you can do without a lot of money. WIth a bit of planning, you can totally do this! I really want to encourage you if you're interested. We have a few videos for beginners where we talk about how to convert recipes to be freezer friendly, and how to get started making small amounts of extra meals. I'll pop a few here. You may want to bear in mind that your videos are watched world-wide, not only in USA. As half of the recipe cannot be understood due to your accent, it will be helpful to show the camera what you are using in case what you said was not understood. A written recipe will also make people more eager to actually cook it rather than saying things like "some" chicken or "a bit" of this or "a bunch" of that. Recipes looks good, but as I cannot understand some parts (and English is my first language in NZ), I will not dare to make it. Thanks
