It seems reasonable to assume from this that a queen w/o compensation is worth 1000 ELO points. Sacrificing with minor piece compensation is then 700 points. So Hikaru with a 900 ELO advantage (3200-2300) would then have 200 ELO advantage which is a 76% win rate.

Hilarious! The curve flattens really fast as you approach 2650+. Stockfish is not winning this against the likes of Niemann, Erigaisi let alone, Levon, So, Fabi et al.

The problem would be that stockfish does not play traps like hikaru, it plays the best, safest move. I am 1500 and I could beat stockfish down a queen, but not hikaru.

Hikaru is getting old forgets how en pessant works then can't remember if he moved his king or not. Repeat exposure to the bongcloud causes some form of chess dementia. All jokes aside I don't know how the fuck he beats players that rating without queens just an absolute legend and does it whilst streaming. Probably just he still needs the bishops. Even with him trading, he still has lower material count because no queen. And also i think because his bishop is very active there, you dont want to trade your active pieces especially on no queen situation.
