People underestimate the importance of cooking in the oven prior to searing in the pan!
@alexneal2923 жыл бұрын
It's called a reverse sear.
@tafarid.73473 жыл бұрын
@MMOByte Why do you put it in the oven first? What does it do?
@hnglbanana3 жыл бұрын
reverse searing is good for thick steaks like this because you can ensure the whole steak cooks to the exact temperature you want it when it's in the oven, then finish it in the pan to get the delicious golden brown crust on the outside. if you try to do it the other way around for a thick steak like this, the crust would burn in the oven before the middle of the steak reaches the desired temperature
