IMO, This is a beautiful example of what composes the culinary arts. Yes, everything in the restaurant was idyllic, but that’s the point. Mise en place. Mise en place. Mise en place. Besides the beauty of the setting, hearing the years-emphasis on years- of work chef put in, in addition to a formal education is what I respect most. Before you get to cut the fish, you watch.

I see all these dope restaurants with really passionate chefs doing 10 covers a night. How are these situations making money? This is a cooks dream.

Simple economics - the kitchen has to bring in enough revenue to survive and with them only having 10 covers a night, you’d naturally assume guests are paying $$$ for their meal. Quality over quantity.

So I looked at it, this place is actually a restaurant in an extremely expensive (aka $1000+/night) hotel called Raffles Singapore. They are charging an extremely expensive amount for the rich clientele of the hotel. That is why they have such low covers. Tasting menu alone is like $220/person, before any alcohol.

Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!

The beauty of this extraordinary establishment is the effort put into every detail by so many dedicated people. The downside to the business model is that you must hit your numbers by feeding wealthy folks that can afford the prices they charge. Lose that demographic group for any reason, and you're immediately in trouble.

Singapore 🇸🇬 is a wonderful place. Since this restaurant is in Raffles Hotel (5 Star) I know it is first class and quite expensive but well worth a one time splurge.

Don/t be fooled by the video, this chef has mentally abused many of it's staffs, resulting in a very high turnover rate. The chef doesn't even acknowledge his staffs and is known for the food wastage, as expected, it is all an act for a video.
